Description

I found this recipe in the April 1975 Relief Society magazine. I really liked it, but not all the family did, so I didn't make it often.

Ingredients for 8 servings

  • 1 cucumber peeled and cut in pieces
  • 1 medium sized onion cut in pieces
  • 2 tomatoes peeled and cut in pieces
  • 2 medium sized green peppers
  • .5 cup vinegar
  • .5 cup sugar
  • .25 cup soy sauce
  • .5 tsp salt
  • Dash of cayenne
  • 2 cloves garlic crushed
  • 4 tbsp cooking oil
  • 2 lbs pork cut very thin
  • 1 tsp cornstarch
  • 2 tbsp water

Steps

  1. Cut vegetables and set aside
  2. Combine in small bowl the vinegar, sugar, soy sauce, salt and cayenne.
  3. Brown garlic in hot oil and add pork and stir fry until well done.
  4. Add vegetables and stir fry for a minute or two.
  5. Add the sauce and stir and cover. Cook two minutes.
  6. Stir in cornstarch and water mixture and cook until thick. Do not overcook the vegetables.
  7. Serve over rice.

Description

Very recently Gary was remembering this dish that I used to make when the family was all home. So here it is, Gary. A recipe using Spam.
Janette Johnson: This is a vintage recipe for sure! I remember having this when we were younger.

Ingredients for 12 servings

  • 2 cans (12 oz each) Spam luncheon meat
  • Whole cloves
  • .25 cup light molasses
  • 3 tbsp prepared mustard
  • 2 tbsp vinegar or lemon juice
  • 2 tsp worcestershire sauce
  • 2 cans (1 lb each) Boston-style baked beans
  • 1 can (20 oz) pineapple chunks (can use apple slices)

Steps

  1. Remove spam from each can and place side by side in a shallow baking dish to make one whole piece. Score spam. Stud with whole cloves. Combine molasses and mustard in mixing bowl. Stir in vinegar and worcestershire sauce. Add beans and pineapple chunks and toss. Spread around the spam. Bake in a 350F oven until all is heated through.

Description

This recipe came from Barbara Perryman Bibbins. It is easy to make and very tasty.

Ingredients for 8 servings

  • 1 package of Frito chips
  • 2 cups shredded sharp cheese
  • 15 oz can of chili con carne beans
  • 15 oz can of enchilada sauce
  • 8 oz can seasoned tomato sauce
  • 1 tbsp minced onions
  • 1 cup sour cream

Steps

  1. Reserve 1 cup of the Fritos and 1/2 cup cheese. Combine everything, put in casserole dish. Bake uncovered 375F for 20 minutes. Take from the oven and spread sour cream over the top and sprinkle with cheese. Make ring of Fritos on top. Bake 5 minutes more.

Description

This is the spaghetti recipe that I grew up having. One time when Brad and I went out to eat at an Italian restaurant this was the same recipe they used for their marinara sauce.

Ingredients for 8 servings

  • 2.5 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • 1 lb browned hamburger
  • 2 tbsp parsley
  • .33 chopped onion
  • .5 tsp garlic
  • 2 (6 oz) cans tomato paste
  • 3 (8 oz) cans tomato sauce

Steps

  1. Brown hamburger, drain and set aside. Saute onion and garlic. Return meat to pan. Add remaining ingredients and mix well. Simmer on low for 3-4 hours, adding water as needed.

Ingredients for 6 servings

  • 1 tbsp olive oil
  • .5 lb bulk sausage or 4 hot Italian sausages
  • 2 tsp bottled crushed garlic
  • .25 tsp red pepper flakes
  • 2 cups meatless spaghetti sauce
  • .5 cup water
  • 16 oz bow tie (farfalle) pasta
  • .5 cup heavy cream
  • Grated Parmesan cheese

Steps

  1. Fill a large pot with water, cover and begin heating over high heat. While the water is heating, put the olive oil into a large frying pan and begin heating over medium-high heat. Add the sausage and then break it into small pieces. If you're using Italian sausage, remove the casings and break the sausages into small pieces. Add garlic and red pepper flakes and cook about 5 minutes or until browned. Add the spaghetti sauce and water. Turn down to low heat, cover and simmer while the pasta is cooking.
  2. Add the pasta to boiling water and cook according to directions. When the pasta is done, drain and add to the sauce.
  3. Just before the pasta is done, add the cream to the sauce and boil 1 minute. Remove from heat. Combine the drained noodles and sauce and serve.

This recipe comes from my mother.

Ingredients for 1 serving

  • 1.5 lbs unseasoned sausage
  • 3 large onions, diced
  • 1 large or 2 medium carrots, grated
  • 2.5 medium potatoes, grated
  • heart of celery equal to one stick, chopped fine
  • 3 loaves of bread, broken
  • 2.5 tbsp sage

Steps

  1. Brown sausage lightly in large skillet, mash into fine pieces. Add the onions and grated potatoes and carrots. Finely chop the celery (use the tender leaves also). Salt and pepper to taste. Cook with lid on until carrots are almost done, stirring occasionally.
  2. Break the loaves of bread, can use more bread if you need more dressing. Sprinkle with sage. Add sausage mixture and stir well. Add some more moisture, (boil some turkey backs, necks or wings beforehand to make some juice) or add canned milk or just plain water. Add enough to make the dressing almost sloppy or so all the bread is moist. Salt to taste.
  3. Stuff the turkey and bake with the bird. The dressing can be baked separately in loaf pans at 350F for 30-45 minutes.

Ingredients for 4 servings

  • 4 skinless, boneless chicken breasts, cut in bite-sized pieces
  • 1 egg, beaten
  • Flour
  • Oil for fying
  • .75 cup sugar
  • .5 cup vinegar
  • .5 tsp garlic powder
  • 4 tbsp catsup
  • 1 tbsp soy sauce

Steps

  1. Dip chicken pieces into egg, then roll in flour. In a small amount of oil, fry the chicken until just browned. Place the chicken in a shallow baking pan and pour the sauce over it.
  2. Sauce: Mix together sugar, vinegar, garlic powder, catsup, and soy sauce. Pour over chicken and bake uncovered at 325F for one hour. Check about half way through and turn if desired.

Ingredients for 8 servings

  • 1 medium onion
  • 1 lb hamburger
  • 1 pint cottage cheese, drained
  • 1 large bottle Prego or Ragu spaghetti sauce
  • 1 cup sour cream
  • 6 oz spaghetti noodles
  • .25 cup Parmesan cheese

Steps

  1. Brown hamburger with onion. Cream together cottage cheese, sour cream, and cheese. Spread part of cheese mixture into 9x13 pan. Layer spaghetti noodles on top. Layer 1/2 of the meat mixture, cheese layer, and sauce layer. Sprinkle with a little more Parmesan cheese. Cover with foil and bake at 325F for 1 1/2 hours.

Ingredients for 4 servings

  • 1 can Cream of Chicken soup (undiluted)
  • .5 cup mayonnaise
  • 2 tbsp lemon juice
  • 2 cups cubed cooked chicken
  • 1 small onion, chopped
  • .25 cup chopped green pepper
  • .25 cup chopped red pepper
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp Cheddar cheese
  • 12 oz med egg noodles, cooked and drained

Steps

  1. In a large bowl, combine soup, mayonnaise, and lemon juice. Add chicken, onions, peppers, 1/2 cup Monterey Jack cheese, and 1/2 cup of Cheddar cheese. Mix well. Add noodles and toss to coat. Transfer to a greased 2 quart baking dish. Bake uncovered at 350F for 40-45 minutes. Add remaining cheeses and cook until cheese is melted.

Ingredients for 6 servings

  • 6 skinless, boneless chicken breasts
  • 1 bottle BBQ sauce (I use Sweet Baby Rays)
  • 1 can Pepsi

Steps

  1. In an electric skillet, place the chicken breasts on the bottom. Pour the bottle of BBQ sauce over the chicken. Then pour the Pepsi around the outside edge around the chicken. Cover and cook at 275F for about 45 minutes. Remove lid and serve.
