Ingredients for 6 servings

  • 1 lb ground beef
  • .25 cup onion, chopped
  • 1 can tomato soup
  • .5 cup ketchup
  • 1 tbsp mustard
  • 2 tsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tbsp flour

Steps

  1. Brown hamburger with onions. Drain. Add everything else. Heat through.
  2. From frozen: Thaw completely. Simmer 10-15 minutes. Serve on toasted hamburger buns. (To add a little crunch, add sliced pickles to your sandwich.)

Ingredients for 8 servings

  • 2 cups cooked and diced chicken
  • 8 oz cream cheese
  • 1 can mushrooms
  • Seasoned bread crumbs
  • 2 cans crescent rolls
  • Butter
  • 1 can cream of chicken soup

Steps

  1. Separate crescent rolls into triangles. Mix cream cheese, chicken and (optional) green onions. Scoop about 1 tbsp of mixture into triangle. Roll up and seal edges. Roll into melted butter, then into bread crumbs. Bake on a cookie sheet at 350F for 25 minutes. Heat soup and serve over the top.

Ingredients for 8 servings

  • Rump roast
  • 2 (10 oz) cans cream of mushroom soup
  • 1 pkg dry onion soup mix
  • 1 tbsp minced onion
  • Salt and pepper

Steps

  1. Sprinkle roast with seasonings. Pour soup and soup mix into crock pot. Add seasoned roast. Cook on high for 4 hours and then 4 more hours on low.

Ingredients for 6 servings

  • 2.5 lbs boneless pork roast
  • .75 cup dried minced onion
  • 1 bottle (12 oz) barbecue sauce
  • .25 cup honey
  • Sandwich rolls

Steps

  1. Place roast in greased 3-5 quart slow cooker. Combine onion, barbecue sauce, and honey. Pour mixture over meat. Cover and cook on low heat 6-8 hours. When roast is done, use two forks to shred meat.

Ingredients for 6 servings

  • 12 lasagna noodles, uncooked
  • 1 lb ground beef, browned and drained
  • 1 tsp Italian seasoning
  • 1 jar (28 oz) spaghetti sauce
  • 1 jar (28 oz) water
  • 16 oz cottage cheese
  • 2 cups mozzarella cheese, grated

Steps

  1. Break noodles in half. Place half of the noodles in bottom of greased 4-quart slow cooker. Stir Italian seasoning into meat and spread half over the noodles already in the slow cooker. Then layer half of the sauce and water, half of the cottage cheese, and half of the mozzarella cheese over the beef. Repeat layers. Cover and cook on low heat 4-5 hours. Do not cook more than 5 hours.

Ingredients for 8 servings

  • 3 lbs boneless, skinless chicken breasts
  • 28 oz can tomatoes, reserve juice
  • Apple juice
  • Basil, fresh or dried
  • Parmesan cheese
  • Sliced mushrooms (OPTIONAL)

Steps

  1. Cut chicken into bite-sized pieces. Dredge in flour that has been salted and peppered. Brown lightly in a small amount of oil. (Do not thoroughly brown or cook-just saute enough so the the flour adheres to the chicken.) Place in casserole dish. Layer with mushrooms. Pour tomatoes over the mushrooms with about half the reserved liquid. Add enough apple juice to over the chicken/tomato mixture. Sprinkle with a heavy dose of basil. Sprinkle with Parmesan cheese. Bake at 375F for 45 minutes. Juice will evaporate so cover with a lid if it starts to become dry towards the end of the baking.

We called this our "Soy Chicken" recipe. Another favorite of Jack's.

Ingredients for 6 servings

  • .25 cup soy sauce
  • .25 cup water
  • .5 small clove garlic minced
  • .5 tsp curry powder
  • .5 tsp oregano
  • Pepper to taste
  • 3 (10 oz) chicken breasts, skinned
  • 9 oz onions thinly sliced, optional

Steps

  1. In a bowl, combine all ingredients except chicken and onions. Layer chicken and onions in casserole. Pour marinade over chicken. Cover and refrigerate for several hours or overnight. Cover with foil. Bake at 325F for one hour or until chicken is tender. Very good with boneless chicken breasts.

Ingredients for 8 servings

  • Steak
  • 8 oz can tomato sauce
  • 3.5 cans water
  • 2 tbsp kitchen bouquet
  • Onion (optional)

Steps

  1. Chop steak for tenderness. Coat with flour and brown on high heat. Salt and pepper steak to taste. Mix together the tomato sauce, water, kitchen bouquet and pour over steak. Can add chopped onions. Cook slowly 3 to 4 hours.

Dorothy Farmer: We made this recipe often when we (Walter, Janette and baby Tyler, and Jack and Dorothy) lived in the motor home together. Pleasant memories!!

Ingredients for 8 servings

  • 1.5 lbs ground beef
  • .67 cup cracker crumbs
  • .33 cup minced onion
  • 1 egg
  • 1.5 tsp salt
  • .25 tsp ginger
  • .25 cup milk
  • 1 tbsp shortening
  • 2 tbsp cornstarch
  • 14 oz can pineapple tidbits, reserve drained juice
  • .33 cup vinegar
  • .33 cup chopped green pepper
  • .5 cup packed brown sugar
  • 1 tbsp soy sauce

Steps

  1. Mix ground beef, cracker crumbs, minced onion, egg, salt, ginger, milk and shape into small meatballs. Melt shortening and brown meatballs and cook until done. Keep warm. Pour fat from skillet, after removing meatballs. Mix and cook until smooth the cornstarch, pineapple juice, vinegar, chopped green pepper, brown sugar and soy sauce. Add pineapple and pour over meatballs.

Marilyn Farmer: Ever since I was introduced to the Farmer family, I have made this spaghetti recipe. My family loves it and requests it often. When we have birthday dinners at our home, this is often the meal we have. Marissa wrote a special note to mother when she was a young child. Inside it said, "I love your spaghetti!"

Ingredients for 8 servings

Meatballs:

  • 1 onion chopped
  • 2 cloves garlic
  • 1 lb ground beef
  • 1 tsp salt

Sauce:

  • 2 cans of tomato soup
  • 2 soup cans of water
  • 2 tbsp lemon juice
  • .25 tsp salt
  • .5 tsp sage
  • .5 tsp sweet basil
  • .25 tsp thyme
  • Dash cayenne pepper

Steps

  1. Rather than form the meat into meatballs, I saute chopped onion, garlic, 1 tsp salt and ground beef together until beef is done. Make sauce by mixing tomato soup, water, lemon juice, 1/4 tsp salt, sage, sweet basil, thyme and cayenne pepper together. Add to tomato soup mixture and simmer about 1 hour. Serve over spaghetti.
