Description
I found this recipe in the April 1975 Relief Society magazine. I really liked it, but not all the family did, so I didn't make it often.
Ingredients for 8 servings
- 1 cucumber peeled and cut in pieces
- 1 medium sized onion cut in pieces
- 2 tomatoes peeled and cut in pieces
- 2 medium sized green peppers
- .5 cup vinegar
- .5 cup sugar
- .25 cup soy sauce
- .5 tsp salt
- Dash of cayenne
- 2 cloves garlic crushed
- 4 tbsp cooking oil
- 2 lbs pork cut very thin
- 1 tsp cornstarch
- 2 tbsp water
Steps
- Cut vegetables and set aside
- Combine in small bowl the vinegar, sugar, soy sauce, salt and cayenne.
- Brown garlic in hot oil and add pork and stir fry until well done.
- Add vegetables and stir fry for a minute or two.
- Add the sauce and stir and cover. Cook two minutes.
- Stir in cornstarch and water mixture and cook until thick. Do not overcook the vegetables.
- Serve over rice.
