Ingredients for 12 servings

  • 1.5 lbs boneless pork, cut in cubes
  • 1 large chopped onion
  • 1 stalk of sliced celery
  • 2 cloves minced garlic
  • 4 cups water
  • 15 oz canned tomato sauce
  • 4 cups chopped cabbage
  • 2 sliced carrots
  • .25 tsp cracked pepper
  • 2 tsp salt

Steps

  1. Brown pork in small amount of fat until nearly brown. Add the onions, celery, and garlic. Cover and continue cooking until vegetables are tender, but not brown, stirring occasionally. Stir in water, tomato sauce, cabbage, carrots, salt and pepper. Bring to boiling. Reduce heat. Cover and simmer for 45 minutes or until meat is tender, stirring occasionally.

Ingredients for 9 servings

  • 1.5 cups flour
  • .5 cup cornstarch
  • .5 cup sugar
  • .5 lb real butter
  • Pinch salt
  • 1 tbsp butter
  • Lemon juice
  • Powdered sugar
  • Walnuts

Steps

  1. Combine first 5 ingredients and press into a square pan. Bake 20 minutes at 350F. Cool and ice with frosting made with 1 tbsp butter, lemon juice and powdered sugar. Top with chopped walnuts.

This recipe is Daniel's favorite childhood dessert!

Ingredients for 12 servings

  • .75 cup flour
  • 1 tsp baking powder
  • .25 tsp salt
  • 4 eggs room temperature
  • .667 cup sugar
  • 1 tsp vanilla
  • 1 cup heavy cream
  • 3 tbsp sugar
  • Strawberries

Steps

  1. Use a jelly roll pan that has been sprayed with Pam and then lined with wax paper and then spray the paper too. Preheat oven to 350F, Beat room temperature eggs in a chilled bowl until thick and lemony. Gradually add sugar until thick. Stir in vanilla and fold in dry ingredients. Spread batter in pan. Bake at 350F for 10 minutes. Barely cook this cake. If it is too done it will not roll. When cake is done sprinkle powdered sugar in a towel and turn cake out onto the towel, roll it up, and let cool. While the cake is cooling whip 1 cup heavy cream and 3 tbsp sugar until stiff. Slice strawberries (can use peaches or whole raspberries). When cake is cool spread out cake and ice with whipped cream and berries and roll the cake back up again. Frost top with additional whipped cream and garnish with berries.

This recipe came from Jim McFarland's mother, Jessie and it is a favorite from Jim's childhood.

Ingredients for 12 servings

  • 1 lb ground beef
  • 2 tbsp chopped onions
  • Salt
  • Pepper
  • 16 oz canned tomato sauce
  • 16 oz hominy with juice
  • 16 oz black olives drained
  • 1.5 cups milk
  • 1 tbsp chili powder
  • .75 cup cornmeal
  • Grated cheddar cheese

Steps

  1. Brown ground beef, chopped onions, salt and pepper to taste and then add all but the cornmeal and cheese. Bring to a boil and add the cornmeal slowly. Then simmer for about 15 minutes, stirring frequently. Place mixture in a casserole dish and sprinkle with grated cheese. Place in the oven until cheese is melted and bubbly.

  • 1 lb ground beef
  • 16 oz can green beans
  • 32 oz ready cut tomatoes
  • 10 oz French onion soup
  • 8 oz tomato sauce
  • 9 oz cheese tortellini
  • 1 tsp salt
  • 1 tsp crushed basil

Steps

  1. Brown the ground beef and add the rest of the ingredients. Simmer together for 20 minutes.

Ingredients for 25 servings

  • 64 oz canned pork and beans
  • 28 oz canned tomatoes
  • 1 lb bacon
  • 2.25 cups brown sugar
  • 2 medium sized sliced onions
  • 1 lb ground beef

Steps

  1. Brown the ground beef and drain. Cut bacon into small pieces, cook and drain. Add to the pork and beans, chopped canned tomatoes, brown sugar, and sliced onions. Bake uncovered at 375F for 2 hours.

Dorothy Farmer: Jim has made this pie for me and it is DELICIOUS especially when made from the blackberries grown in their back yard.

Ingredients for 8 servings

  • 3.5 cups of blackberries
  • .25 cup flour
  • 1 cup of sugar or to taste
  • 3 tbsp tapioca
  • 1 tbsp lemon juice
  • 1 uncooked pie crust

Steps

  1. Put the first five ingredients in a uncooked pie crust and bake at 450F for 10 minutes, then reduce baking temperature to 350F and bake for 35-40 minutes or until filling is bubbling and pie crust just starts to turn tan. Good served warm or cold, with vanilla ice cream.

Ingredients for 8 servings

  • .5 cup real butter
  • 1 cup heavy cream
  • .5 cup Parmesan cheese
  • Garlic Powder
  • Salt
  • Pepper

Steps

  1. Bring mixture to a slow boil adding salt, pepper, and garlic to taste. Let mixture set up off heat for approximately 15-20 minutes.

Ingredients for 15 servings

  • 2 cubes butter
  • 1.5 cups milk
  • 3 eggs
  • 3 cups bisquick
  • 1 cup sugar
  • .75 tsp baking powder
  • .25 cup cornmeal

  1. Mix all the ingredients and pour in a 9x13 ungreased pan. Bake at 375F for 30 minutes. This is a real fluffy sweet cornbread. More like corn cake, but delicious

Ingredients for 8 servings

  • .75 cup flour
  • .75 cup margarine
  • 1.5 quarts milk
  • 12 oz can chicken broth
  • 1.5 tsp salt
  • 1 tbsp sugar
  • Few grains pepper

Steps

  1. Melt margarine. Add flour, salt, pepper and sugar. Slowly add milk and chicken broth. Bring to a boil, stirring constantly.
  2. For potato cheese soup: add 1 cup onion chopped, 1 cup celery chopped, and 2 cups diced potatoes. Barely cover veggies with water. Simmer until potatoes are tender. Add undrained veggies to soup base. Add 1-2 cups grated cheese and cooked frozen peas and carrots. Could also add ham or whatever your family likes.
  3. For broccoli soup: cook veggies as for potato soup (not carrots and peas). Add well drained cooked broccoli.
  4. For clam chowder: add 2 6-1/2 oz cans minced clams with the cooked veggies to base.
