Ingredients for 2 servings

  • .5 cup butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup sour cream
  • 3 bananas, mashed
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp baking powder
  • .5 tsp salt
  • 2.5 cups flour

Steps

  1. Cream butter, sugar, and eggs. Add the remaining ingredients. Grease pans with butter and liberally dust with cinnamon and sugar (don't be stingy with either!) Bake at 325F for 50-60 minutes.

This is a sweet chili.
Dorothy Farmer: This is such a good recipe and slightly different than regular chili recipes. I entered it in a chili cookoff and won first place with it. It is GOOD!!

Ingredients for 15 servings

  • 3 cups dry red beans
  • 16 oz can tomato sauce
  • 16 oz can whole tomatoes
  • 1.5 cups ketchup
  • .25 cup lemon juice
  • .25 cup brown sugar
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup green pepper, diced
  • 1 bay leaf
  • 1 tbsp chili powder (I use less)
  • 1.5 tsp salt
  • 2 tbsp Worcestershire sauce
  • .5 tsp mustard
  • 2 tsp cumin
  • 2 lbs hamburger, browned

Steps

  1. Soak beans in 6 cups water overnight. Cook 1 1/2 hours adding more water as needed to keep covered. Add the remaining ingredients. Cover and simmer 1 hour, stirring occasionally. Cook longer for thicker chili. Remove bay leaf before serving.

Ingredients for 6 servings

  • 1 rotisserie chicken, boned (can be boiled or grilled as well)
  • .5 cup chopped onions
  • .25 cup chopped celery
  • 1 cup diced red potatoes
  • .5 cup frozen peas
  • 3 tbsp flour
  • 4 tbsp olive oil or butter
  • .5 cup low fat milk or evaporated milk
  • 2 cups chicken stock
  • .5 cup chopped carrots
  • Pie crust

Steps

  1. Preheat oven to 400F. Prepare deep round cooking dish with cooking spray. In a large nonstick pan, heat oil or butter. Saute onions and celery for 2 minutes. Add flour and stir constantly to form a blonde roux. Gradually add the broth and bring to a boil. Reduce heat to a simmer and continue to cook for 4-6 minutes or until the sauce thickens. Stir in milk and cook for 4 more minutes. Season with salt and pepper.
  2. Stir in potatoes, carrots, peas, and chicken. Mix thoroughly with the sauce. Cook until potatoes are tender, 10-12 minutes. Place pie crust in casserole dish, fill with chicken mixture and top with the second crust, sealing the edges. Slightly beat an egg and brush the top crust. Bake for 30 minutes or until the crust is golden brown.

Ingredients for 15 servings

  • 1 cup oatmeal
  • 1.5 cups boiling water
  • .5 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1.5 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon

Topping:

  • 6 tbsp butter
  • 1 cup brown sugar
  • .25 cup evaporated milk
  • 1 cup coconut or rolled oats
  • 1 cup chopped nuts
  • .5 tsp vanilla

Steps

  1. Preheat oven to 350F. Pour boiling water over 1 cup oats. Let stand for 15 minutes. Cream 1/2 cup butter, 1 cup sugar, 1 cup brown sugar, and eggs. Add soaked oatmeal to sifted flour, salt, soda, and cinnamon. Pour into greased 9x13 pan and bake for 30 minutes. Check at 25 minutes-do not over cook.
  2. Make topping: Heat butter, brown sugar, and milk in microwave for 1-2 minutes. Mix in coconut, nuts and vanilla. Spread topping over cake and put under broiler for 1-2 minutes until golden brown. Watch carefully.

Ingredients for 1 serving

  • .5 cup butter
  • 2 squares unsweetened chocolate
  • .33 cup milk
  • 1 lb powdered sugar
  • 1 tsp vanilla (sometimes I add a little almond extract too)

Steps

  1. Melt butter and chocolate in a saucepan over low heat. When melted, add milk and stir over low heat until the mixture thickens and separates. Pour into a mixing bowl with powdered sugar and vanilla and mix until smooth. Thicken with more sugar and thin with a little milk.

  • 2 squares unsweetened chocolate
  • 1 cup hot water
  • 2 cups flour
  • 2 cups sugar
  • .5 tsp baking soda
  • .5 tsp salt
  • .5 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • Fudge Frosting (recipe in this book)

Steps

  1. Preheat oven to 375F. Melt butter and chocolate in a saucepan over low heat. Meanwhile, mix flour, sugar, salt, and baking soda in a large mixing bowl. Set aside. When butter and chocolate are melted, add hot water and boil for 2 minutes. Pour hot chocolate mixture into the dry ingredients and mix well. Add milk and mix. Add eggs and vanilla and mix until creamy. Pour into greased 9x13 pan and bake at 375F for 30 minutes. Cool before frosting.

Description

I enjoy this casserole without frying the tortillas-but I live in the South where we fry everything.

Ingredients for 6 servings

  • 1 chicken, stewed, boned and diced (or 3-4 chicken breasts)
  • 1 onion, chopped
  • 1 small can diced green chiles
  • 3 tbsp butter
  • 2 cans cream of mushroom soup
  • 1 can evaporated milk
  • 12 corn tortillas
  • Salt and pepper to taste, (use a little garlic salt too)
  • Grated longhorn cheese
  • Sour cream for garnish

Steps

  1. Saute onion and chiles in butter. Add soup, milk, chicken and season to taste.
  2. Fry tortillas in hot oil just until tender. Blot off excess oil and tear into smaller pieces.
  3. Alternate layers of tortillas, soup mixture, and cheese in a 9x13x2 baking dish. Finish off with cheese and bake at 350F until bubbly and cheese is melted. Let sit for 5 minutes and serve. Garnish with a dollop of sour cream.

Ingredients for 12 servings

  • 1 pkg yeast
  • .5 cup water water (105F-115F)
  • .5 cup scalded milk, cooled
  • .33 cup sugar
  • .33 cup butter, softened
  • 1 tsp salt
  • 1 egg
  • 3.75 cups flour
  • 1 cup brown sugar
  • .33 cup butter, softened
  • 2.5 tbsp ground cinnamon
  • .5 cup butter, softened

Icing:

  • 1.5 cups powdered sugar
  • .25 cup cream cheese, softened
  • 1 tsp vanilla
  • .125 tsp salt

Steps

  1. Dissolve yeast in warm water in a 2 1/2 quart bowl. Stir in milk, 1/3 cup sugar, 1/3 cup butter, 1 tsp salt, egg, and 2 cups of the flour. Beat until smooth. Stir in enough of the remaining flour to make dough easy to handle. Turn onto lightly floured surface. Knead until smooth and elastic, about 5 minutes. Place in greased bowl, turn greased side up. Cover. Let rise in warm place until double, about 1 1/2 hours. (Dough is ready if indentation remains when touched.)
  2. Flatten dough with hands or rolling pin into rectangle 15x9 inches on lightly floured surface.
  3. For filling, combine brown sugar and cinnamon in a bowl. Spread 1/3 cup butter evenly over the dough and then sprinkle the cinnamon sugar evenly over the surface. Working from the top, carefully roll the dough down to the bottom edge, lengthwise. Cut the log into 1 3/4 inch slices and place six at a time, evenly spaced, in a lightly greased baking pan. Allow to rise.
  4. Bake at 400F for 12 minutes, or until light brown on top. While the second batch of rolls bake, combine the powdered sugar, cream cheese, vanilla, and salt. Beat with an electric mixer until light and fluffy. When the rolls come out of the oven, cool 5 minutes then coat each generously with icing. Serve with leftover icing.

My personal favorite appetizer.

Ingredients for 24 servings

  • 1 tub shredded Parmesan cheese
  • 14 oz artichoke hearts in brine, not marinated, drained and chopped
  • 2 cloves minced garlic
  • .75 cup good quality mayonnaise
  • 3.5 loaves of soft white bread

Steps

  1. Mix together all ingredients except the bread. The mixture should be moist. Put a scant tsp of mixture in the center of each slice of bread and crimp with a crescent shaped tool. Preheat oven to 425F and arrange empanadas on a baking sheet. Brush with melted butter and minced garlic and bake for 12 minutes.

When a crew is coming for dinner and you need a hot main dish, these sandwiches will knock your socks off. They are also prepared a few days in advance so they are less work the day of!

Ingredients for 48 servings

  • 2 pkg white Hawaiian rolls (12 count)
  • 2 pkg wheat Hawaiian rolls (12 count)
  • 1.5 lbs Black Forest ham, thinly sliced
  • 1.5 lbs honey turkey, thinly sliced
  • 2 lbs baby Swiss cheese, thinly sliced

Marinade

  • 1 cup butter
  • 2 tbsp sugar
  • 1 tsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tbsp poppy seeds
  • 2 tbsp minced onion

Steps

  1. Slice rolls in half horizontally without individually separating them. Put the bottom half back in the original paper tray. Layer half the rolls with ham and cheese and the other half with turkey and cheese. Replace the top of the rolls and place the box on foil. Brush well with marinade, seal tightly with the foil and refrigerate for 2 days.
  2. To make the marinade: Melt the butter in microwave, add other ingredients and microwave 1 minute more or until all ingredients are mixed together and thoroughly coated with butter.
  3. Bake in original box that is wrapped in foil for 20-25 minutes at 350F.
