This was my mother's recipe.

Ingredients for 10 servings

  • 2 cups Bisquick
  • .5 cup sugar
  • 1 egg
  • .66 cup milk
  • 1 tsp vanilla
  • Nuts, chopped
  • 2 bananas, mashed

Steps

  1. Mix ingredients together, except bananas. Beat until well blended. Put in nuts and bananas. Bake at 350F for 1 hour.

Ingredients for 12 servings

  • 1 cup shortening
  • 2.5 cup flour
  • .5 tsp baking soda
  • 4 eggs
  • 1 cup mashed bananas (2-3 large bananas)
  • 1.5 cups sugar
  • .5 cup buttermilk
  • .5 cup chopped pecans
  • .5 tsp vanilla

Steps

  1. Combine and pour into 2 large, greased loaf pans. Bake at 350F for 60 minutes. (4 mini loaves bake for 30 minutes). While still warm pour glaze of powder sugar, vanilla, and water and pour over the top.

Ingredients for 3 servings

  • 3 eggs
  • 2 cups sugar
  • 1 cup butter
  • .5 cup boiling water
  • 2.5 cups flour
  • .25 cup cocoa
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 2 tsp ground allspice
  • 1 cup chopped walnuts
  • 1 cup chocolate chips
  • 2 cups peeled, grated apples
  • 1 tsp vanilla

Steps

  1. Cream together eggs, sugar, butter, and water.
  2. Sift together flour, cocoa, baking soda, cinnamon, and all spice. Add to creamed mixture and mix well. Fold in remaining ingredients.
  3. Mix until blended evenly. Spoon into 3 greased and floured medium sized loaf pans (fill pans to about 1 inch below the edge of pan). Bake at 325F for about 50 minutes.

Ingredients for 1 serving

  • 2.5 cups flour
  • 1.66 cups sugar
  • 1.25 tsp baking powder
  • 1.25 tsp baking soda
  • 1 tsp salt
  • .66 cup oil (I like to use 1/2 cup oil and 1/2 cup applesauce)
  • 3 eggs
  • 3 mashed bananas
  • .5 tsp vanilla
  • 1 tbsp vinegar
  • .66 cup milk

Steps

  1. Mix together flour, sugar, baking powder, baking soda, salt, and oil (and applesauce if using).
  2. In a separate bowl, combine vinegar and milk and let stand for a few minutes. Then add eggs, bananas, and vanilla.
  3. Mix all ingredients together and pour into loaf pan. Bake for 1 hour at 350F.

I like to bake this bread to use some of the 25 yummy pounds of pecans Lon's granddad sends us for Christmas every year. Anyone want some pecans?

Ingredients for 2 servings

  • .75 cup butter, softened
  • 8 oz cream cheese, softened
  • 2 cups sugar
  • 2 eggs
  • 1.5 cups mashed bananas
  • .5 tsp vanilla
  • 3 cups flour
  • .5 tsp baking powder
  • .5 tsp baking soda
  • .5 tsp salt
  • 2 cups chopped pecans, divided

Orange Glaze:

  • 1 cup powdered sugar
  • 3 tbsp orange juice
  • 1 tsp grated orange peel

Steps

  1. In a large bowl, cream butter, cream cheese, and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add bananas and vanilla, mix well. Combine flour, baking powder, baking soda, and salt. Add to creamed mixture. Fold in 1 cup pecans.
  2. Transfer to 2 greased loaf pans. Sprinkle with the remaining pecans. Bake at 350F for 1 to 1 1/4 hours or until a toothpick inserted comes out clean.
  3. In a small bowl, whisk the glaze ingredients. Drizzle over loaves. Cool for ten minutes before removing from pans and placing on wire racks.

  1. Cream butter, sugar, and eggs. Add the remaining ingredients. Grease pans with butter and liberally dust with cinnamon and sugar (don't be stingy with either!) Bake at 325F for 50-60 minutes.

  1. Beat eggs until light and foamy. Add sugar, vanilla, oil, and zucchini and mix well. In sifter combine the remaining ingredients. Add to the creamed mixture. Divide into 2 greased tins. Bake at 325F for about 1 hour. Remove from pans. If desired, frost with a thin coat of powdered sugar while warm.

Ingredients for 40 servings

  • 3 eggs
  • 1.125 cups of vegetable oil
  • 2.25 cups sugar
  • 3 cups of flour
  • 1.5 tsp salt
  • 1.5 tsp baking powder
  • 1.5 cups milk
  • 1.5 tsp almond extract
  • 1.5 tsp butter flavor extract
  • 1.5 tsp vanilla
  • 2.25 tbsp poppy seed

Glaze:

  • .25 cup orange juice
  • .75 cup sugar
  • .5 tsp almond extract
  • .5 tsp butter flavored extract
  • .5 tsp vanilla

Steps

  1. Beat eggs, add oil and sugar and beat together until smooth.
  2. Sift together flour, salt and baking powder, set aside.
  3. Mix together milk, almond extract, butter flavored extract, vanilla and poppy seed.
  4. Alternately add dry ingredients and the milk mixture into the creamed mixture. Oil pans and bake at 325F for one hour and 15 minutes, or until done. Teflon pans are best. I line mine with wax paper that has been oiled for easy removal.
  5. While baking, make glaze. Put into small sauce pan the orange juice, sugar, almond extract, butter flavored extract, and vanilla. Heat just until the sugar dissolves. When loaves are done, remove from oven but leave in pans and pour the glaze over the tops.

  • 4.5 cups of sugar
  • 1.5 cups melted butter
  • 3 cups pumpkin
  • 1 cup water
  • 6 eggs
  • 1.5 tsp vanilla extract
  • 5 cups flour
  • 3 tsp baking soda
  • 2 tsp salt
  • 1.5 tsp cinnamon
  • 1.5 tsp nutmeg
  • Chocolate chips

Steps

  1. Mix together all ingredients adding chocolate chips last. Bake 2 hours at 325F for large loaves and for medium loaf pans bake for 15 minutes less or until no beads of moisture show on the top of the loaves.
