Ingredients for 8 servings

  • 8 quarts of peeled, sliced apples (Granny Smith, yellow delicious, etc)
  • .5 cup lemon juice
  • 5 cups sugar
  • 5 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cups light corn syrup
  • .75 tsp salt
  • 2 cups corn starch

Steps

  1. Cook apples till tender in a very small amount of water. Add lemon juice and corn syrup. Mix sugar, spices, and cornstarch together before adding to apples. Let cook until it thickens. Pour into quart jars and seal. Water bath for 20 minutes.

Ingredients for 8 servings

  • 3 lbs red potatoes
  • Salt and pepper to taste
  • 8 cloves garlic (medium size)
  • 1.25 tsp paprika
  • .5 cup oil

Steps

  1. Preheat oven to 450F.
  2. Clean and cut potatoes into 1 inch cubes. Put into a 9x13 pan. Salt and pepper to taste.
  3. Stir the crushed garlic and paprika into the oil. Add to the potatoes and stir until coated. Bake for 15-20 minutes and stir. Stirring is important or the potatoes will stick. Continue to bake and stir every 5-7 minutes until potatoes are tender.

Ingredients for 20 servings

  • 4 eggs
  • 2.25 cups sugar
  • 7 cups whipping cream
  • 4 cups half and half
  • 4.25 tsp vanilla
  • .5 tsp salt

Steps

  1. Beat eggs until light. Add sugar gradually, beating until slightly thickened. Add remaining ingredients, mixing thoroughly. Pour mixture into gallon freezer and freeze according to freezer directions.

Ingredients for 16 servings

  • .25 cup margarine
  • 3 cups chopped onions
  • 12 cloves garlic, minced
  • 5 tbsp Worcestershire sauce
  • 2 tsp black pepper
  • 2 tsp oregano
  • 5 tbsp prepared mustard
  • 1 cup brown sugar
  • .33 cup vinegar or lemon juice
  • 10 oz molasses
  • 1 tbsp chile powder
  • 2 cups chile sauce or ketchup
  • .5 cup water
  • .5 tsp liquid smoke, or to taste

Steps

  1. Saute onions and garlic in margarine for 10 minutes, stirring frequently. Add Worcestershire sauce, pepper and oregano, simmering 10 minutes more. Add remaining ingredients and simmer for 40 minutes more, stirring frequently. Yields 6-8 cups.

Ingredients for 10 servings

  • 2 cups peeled, diced potatoes
  • 1.75 cups sliced carrots
  • .66 cup chopped onion
  • 1 cup butter
  • 1 cup flour
  • 1.75 tsp salt
  • 1 tsp dried thyme
  • .75 tsp pepper
  • 3 cups chicken broth
  • 1.5 cup milk
  • 4 cups cooked chicken, cubed
  • 1 cup frozen peas
  • 1 cup frozen corn
  • Pastry for two double crust pies

Steps

  1. Place potatoes and carrots in large saucepan and cover with water. Bring to a boil. Reduce heat, cover, and simmer for 8-10 minutes or until crisp tender. Drain and set aside. In a large skillet sauté onion in butter until tender. Stir in flour, salt, thyme and pepper until blended. Gradually stir in broth and milk. Bring to a boil. Cook and stir for 2 minutes or until thickened. Add the chicken, peas, corn, potatoes and carrots then remove from heat.
  2. Line two 9 inch pie plates with pastry. Trim even with edge of plate. Fill pastry shells with chicken mixture. Roll out remaining pastry to fit top of pies. Cut slits in pastry top. Place over filling, trim and seal edges. Bake at 425F for 25-30 minutes or until crust is lightly browned. Let stand 15 minutes before cutting.
  3. You can cover and freeze uncooked pies for future use. To bake frozen pie- cover pie crust edges with foil then place on a baking sheet. Bake at 425F for 30 minutes. Reduce heat to 350 and bake 70-80 minutes longer or until crust is golden brown.

Ingredients for 16 servings

  • 8 cups golden grahams
  • 6 cups mini marshmallows
  • 1.5 cups milk chocolate chips
  • .25 cup light corn syrup
  • 5 tbsp butter or margarine
  • 1 tsp vanilla

Steps

  1. Melt butter and 5 cups of marshmallows in large pot. Add chocolate chips and corn syrup. Stir until all is melted. Remove from heat and add vanilla. Mix well. Add golden grahams then add final 1 cup marshmallows. Place in a greased 9x13 pan. Let stand uncovered at least 1 hour or refrigerate for a firmer bar.

Ingredients for 12 servings

  • 5 to 6 potatoes, peeled and chopped
  • .25 onion, chopped
  • 4 cups milk
  • .5 cup flour
  • Pepper/salt
  • Shredded cheese
  • White pepper
  • .66 cup sour cream

Steps

  1. Boil potatoes and onions until tender. Drain water. Mix milk and flour in a bowl with whisk. Add to potatoes, stirring constantly, with whisk, until thickened and starts to boil. Add more milk if too thick. Remove from heat. Add sour cream and seasonings to desired taste.

Ingredients for 8 servings

  • 3 cups sweet potatoes, mashed
  • 1 cup sugar
  • .5 cup butter, softened
  • 3 eggs
  • 1 tsp vanilla
  • 1 tsp ground nutmeg
  • 1 cup sour cream
  • Pinch of baking soda
  • Pinch of salt
  • Mini marshmallows (for topping)

Steps

  1. Boil unpeeled potatoes (approx. 4 large ones) until tender. Peel and place in mixing bowl. Mash well with fork or mixer. With a wooden spoon, stir in sugar, butter, eggs, vanilla, nutmeg, and sour cream. Mill well. Stir in salt and baking soda. Spread mixture in a greased 1 1/2 qt casserole dish and bake uncovered at 350F 35 to 40 minutes. Remove from oven and place marshmallows on top. Place casserole back into oven until marshmallows are melted and lightly brown (watch carefully as to not burn them).

Ingredients for 8 servings

  • 1 quart apple pie filling
  • 2 cups brown sugar
  • 1.5 cups flour
  • 1.5 cups oatmeal
  • 2 tsp cinnamon
  • 1 cup margarine, softened

Steps

  1. Spread pie filling in bottom of pan. Mix remaining ingredients and cut in margarine. Sprinkle mixture over filling. Bake at 350F for 40 to 45 minutes. Serve with ice cream or cool whip.

  • 8 chicken tenders
  • 1 can cream of chicken soup
  • 3 tbsp sour cream
  • .25 cup milk
  • 3 slices baby Swiss cheese
  • 1 box stove top dressing
  • .25 cup water
  • .25 cup butter
  • Salt
  • Pepper
  • Onion powder
  • Garlic powder

Steps

  1. Layer chicken in greased baking dish. Sprinkle with a little salt, pepper, onion powder, and garlic powder. Layer cheese on top of chicken.
  2. In a bowl, mix soup, milk, and sour cream. Pour on top of cheese. Melt butter. Add dressing and mix thoroughly. Cover and bake at 350F for 35-45 minutes.
