Description

Another recipe from Dan's niece Stephanie Sundseth, who served this at her restaurant.

Ingredients for 10 servings

  • 15 oz can stewed tomatoes
  • 1 oz fresh basil
  • 2 tbsp sugar
  • 2 tbsp butter
  • 1 pint heavy cream
  • 1 pint half and half

Steps

  1. Blend tomatoes and basil together in a food processor. Do not over process, mixture should be slightly chunky. Bring tomato mixture to a simmer over medium high heat for 30 minutes. Add remaining ingredients and simmer another 30-60 minutes.

Two different bruschetta recipes. The roasted recipe comes from Stephanie Sundseth.

Ingredients for 10 servings

Roasted Recipe:

  • 2 (11.5 oz) cans diced stewed tomatoes
  • 7 cloves garlic, chopped
  • 1 oz fresh basil, chopped
  • .25 cup olive oil
  • 1 cup Parmesan cheese, shredded

Fresh Tomato Recipe:

  • 6 large Roma tomatoes, finely chopped
  • 3 cloves garlic, minced
  • .5 cup fresh basil, finely chopped or use 1 tsp dried
  • .5 cup olive oil
  • 1 tsp balsamic vinegar
  • Pinch of sugar
  • Salt and Pepper to taste

Steps

  1. Roasted Recipe: Mix all ingredients together except the cheese and put in a 9x13 dish. Bake at 350F for 20-30 minutes. Top with cheese and serve with toasted buttered baguettes.
  2. Fresh Tomato Recipe: Mix all the ingredients together. Serve with baguette bread slices that have been brushed with olive oil and toasted.

Description

Ask any child in the Crites' family the origin of this recipe. It has become a family joke because they have heard it a million times! Chuck was Dan's roommate in college.

Ingredients for 16 servings

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 3 (29 oz) cans crushed tomatoes
  • 1 can water
  • 12 oz can tomato paste
  • 1 bay leaf
  • 2 tbsp parsley
  • 1 tbsp cut oregano
  • 1 tbsp cut basil
  • 6 mild or sweet Italian sausage links
  • Salt and pepper to taste

Steps

  1. Saute the onion and garlic in the oil in a large pot. Cut the sausages into bite size pieces. Add all ingredients together and stir well. Simmer 2-3 hours for meat to get tender and sauce to thicken. Watch for scorching and stir occasionally.
  2. Can also add meatballs and sliced pieces of pepperoni links. I will often use onion and garlic powder in place of the fresh.
  3. Use for spaghetti or with lasagna as you would a marinara sauce. We have traditionally used penne pasta with this recipe.

This is a recipe that Janette and I have used often.

Ingredients for 48 servings

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup peanut butter
  • 2 eggs
  • 2.5 cups flour
  • 2 tsp baking soda
  • 1 tsp vanilla
  • Pinch salt

Steps

  1. Cream together the butter, sugars, peanut butter and eggs. Add the remaining ingredients. Roll into balls and flatten slightly with a fork on a greased cookie sheet. Sprinkle with raw sugar. Bake at 350F for 8 minutes.

A holiday family favorite for us.

Ingredients for 30 servings

  • 1 cup sugar
  • 1 quart water
  • 10 cloves
  • 2 cinnamon sticks
  • 8 allspice berries
  • 6 oz frozen orange juice concentrate
  • 6 oz frozen lemonade concentrate
  • 1 gallon apple cider

Steps

  1. Make a simple syrup by combining the sugar and water. Boil 5 minutes. Remove from heat. Make a spice bag of the cloves, cinnamon, and allspice. Leave the spice bag in the syrup for 1 hour. Remove the bag and add the remaining ingredients. Heat, but do not boil.

Ingredients for 15 servings

  • 1 cup sugar
  • 1.75 cups water
  • 2 tbsp cornstarch
  • 3 oz pkg peach jello
  • 5 cups peeled, sliced fresh peaches
  • 2.5 cups graham cracker crumbs
  • 8 tbsp powdered sugar, divided
  • .5 cup melted butter
  • 11 oz cream cheese, softened
  • 12 oz cool whip

Steps

  1. Boil sugar, water and cornstarch until thick. Add jello. Set aside until almost set and then add the peaches.
  2. Make the crust by mixing together the cracker crumbs and 4 tbsp of the powdered sugar. Stir in the butter and press 1/2 of this mixture into a 9x13 pan. (Save the rest for the top.) In a separate bowl, beat the cream cheese and 4 tbsp powdered sugar together. Fold in the cool whip and stir until smooth. Spread over the graham cracker crust. Pour the cooled, but not set jello mixture on top. Sprinkle the remaining crumbs over the jello. Chill until set.

Ingredients for 10 servings

  • 4 oz chopped green chili
  • 2 large tomatoes, chopped
  • .5 bunch green onions, chopped
  • 1 small can chopped olives
  • 1 large avocado, chopped
  • 1.5 tbsp olive oil
  • 1.5 tsp garlic salt
  • 1.5 tsp white vinegar

Steps

  1. Mix ingredients together and marinate overnight. Serve with tortilla chips.

Ingredients for 8 servings

  • 2 lbs ground pork or chicken
  • 2 tsp ground ginger
  • 1.5 tsp garlic powder
  • 2 tbsp finely chopped green onions
  • 2 tbsp soy sauce
  • 1 pkg won ton wrappers
  • Salt to taste
  • Rice vinegar and soy sauce

Steps

  1. Grind meat in food processor. Add the ginger, garlic, onions, soy sauce, and salt. (Change the amounts to suit your taste.) Let stand for 30 minutes to absorb flavors. Spread the won ton wrappers out on counter. Lightly brush water around the edges. Put a generous tsp of meat mixture in the center of each. Wrap up according to instructions on the package. Place in an electric skillet in a small amount of hot oil and brown on both sides. Add a little water, cover and steam to finish cooking, adding more water as needed. Remove from skillet and place in warm oven until ready to serve.
  2. Make dipping sauce by combining equal amounts of rice vinegar and soy sauce.

  • 2 bags microwave pop corn
  • 2.5 cups mini marshmallows
  • .75 cup butter
  • .75 cup brown sugar
  • .5 cup white chocolate chips
  • .5 cup semi-sweet chocolate chips

Steps

  1. Pop corn and filter out unpopped kernels. Put into a big bowl. Heat together the mini marshmallows, butter and brown sugar until melted, do not boil. Pour over popped corn. Spray a cookie sheet and spread caramel corn evenly. Melt the chips in separate containers and drizzle over the pop corn. Chill in refrigerator until chocolate has hardened.

Ingredients for 36 servings

  • .75 cup shortening
  • 1 cup sugar
  • 1 egg
  • 4 tbsp molasses
  • 2 cups flour
  • 2 tsp baking soda
  • .5 tsp salt
  • 1 tsp cinnamon
  • .75 tsp ginger
  • Raw sugar
  • White chocolate

Steps

  1. Cream shortening and sugar, add egg and molasses. Mix in flour, soda, salt, cinnamon, and ginger. Chill dough 1 hour. Form into 1 inch balls. Dip one half into raw sugar and place on parchment lined cookie sheet 1 inch apart. Bake in 350F preheated oven for 10 minutes or until the top of the cookie starts to form cracks. Remove from oven and cool on racks. Melt chocolate and dip non sugar-side of cookie into the chocolate. Place on parchment until chocolate has hardened.
