Description

These taste just like peach cobbler!

Ingredients for 12 servings

  • 1.5 cups flour
  • .5 cup brown sugar
  • .5 cup sugar
  • .75 tsp salt
  • .5 tsp baking soda
  • .125 tsp nutmeg
  • .125 tsp cinnamon
  • 1 tsp vanilla
  • 2 eggs
  • .5 cup oil
  • 1 (15 oz) can sliced peaches, drained well and chopped

Topping:

  • .25 tbsp cinnamon
  • .75 tbsp sugar

Steps

  1. Mix dry ingredients. Add remaining ingredients except peaches. Stir until blended (may appear thick). Fold in peaches. Fill 12 muffin liners 3/4 full. Sprinkle muffin tops lightly with topping. Bake at 350F for 25-27 minutes or until toothpick inserted comes out clean. Let cool for 10 minutes before removing from pan.

Ingredients for 4 servings

  • 1 cup rice
  • 1 can coconut milk
  • .75 cup water
  • 3 tbsp sugar
  • .5 tsp salt

Steps

  1. Mix all ingredients in a pan and cook like regular rice, covered, stirring often, until water is absorbed and rice is tender.

We love to serve these during the summer when we barbecue.

Ingredients for 8 servings

  • 5 medium potatoes, peeled and sliced
  • .25 cup grated parmesan cheese
  • 2 tsp minced fresh parsley
  • .75 tsp garlic powder
  • .5 tsp salt
  • .125 tsp pepper
  • 4 tbsp butter, cubed

Steps

  1. Place 1/2 of the potatoes on a large piece of heavy duty foil. Sprinkle with cheese, parsley, garlic powder, salt, and pepper. Dot with butter. Top with remaining potatoes. Fold foil over and seal tightly. Grill, covered, over medium heat for 30 minutes, turning half way through.

It's not a traditional Mexican recipe but it's really easy and a great side dish.

Ingredients for 4 servings

  • 2 tbsp oil
  • .5 bell pepper, chopped
  • .25 onion, diced
  • 1 clove garlic, minced
  • 1 cup rice
  • 1 can petite diced tomatoes
  • 1 cube chicken bouillon
  • 2 cups water
  • 1 tsp salt

Steps

  1. Saute oil, bell pepper, onion, garlic, and rice until rice begins to turn golden brown. Then add the rest of the ingredients. Cook like regular rice, covered, stirring often, until water is absorbed and rice is tender.

Ingredients for 4 servings

  • 2 cups butter
  • 2 cups corn syrup
  • 2 cups brown sugar
  • 2 cups sugar
  • 2 cups sweetened condensed milk

Steps

  1. Bring all ingredients to a boil. Boil 5 minutes for sauce or longer if making caramels.

Ingredients for 8 servings

  • 1 lb fettucini
  • 1 (8 oz) pkg cream cheese, softened
  • .5 cup butter
  • 1 cup Parmesan cheese
  • 1 tsp garlic powder
  • 1 cup milk

Steps

  1. Cook the pasta according to the package directions. Meanwhile, place all the rest of the ingredients in a heavy saucepan. Put over medium-low heat and let it all melt together and become smooth. Add more milk if it becomes too think. You can also add cooked chicken or shrimp to the sauce or just top the dish off with grilled chicken on top.

Ingredients for 4 servings

  • 1.5 cups flour
  • .5 cup wheat flour
  • 1.5 tsp baking powder
  • .5 tsp baking soda
  • .5 tsp salt
  • 1.75 cup buttermilk
  • 2 tbsp melted butter
  • 1 egg
  • 1 tbsp honey
  • .5 tsp vanilla
  • .5 cup mashed bananas

Sauce (best if doubled):

  • 2 cups diced strawberries
  • .33 cup orange juice
  • 1 tbsp cornstarch
  • .5 cup sugar

Steps

  1. Pancakes- Whisk all wet ingredients together, then add all dry ingredients. Stir until moistened. Fold in bananas and then cook.
  2. Sauce- Combine all together in a sauce pan. Cook until thickened and strawberries are soft (6-7 minutes). This can be refrigerated up to a week.

Ingredients for 8 servings

  • 1 head Romaine lettuce
  • 1 head red leaf lettuce
  • 11 oz mandarin oranges, drained
  • 3 gala apples, sliced
  • 8 oz pecans (toasted with 1/4 cup sugar)

Dressing:

  • .75 cup sugar
  • 1 tsp salt
  • .33 cup apple cider vinegar
  • 1 tbsp poppy seeds
  • 1 tsp dry mustard
  • 1 tbsp fresh onion, finely diced
  • .75 cup vegetable oil

Steps

  1. Wash and tear lettuce. Add apples, oranges, and craisins.
  2. Measure all dressing ingredients except poppy seeds into blender and blend well. then add poppy seeds and blend to mix in.
  3. Toss salad with pecans and add dressing just before serving.

Ingredients for 24 servings

  • 1.5 cups warm water
  • 1 tbsp yeast
  • 2 tbsp sugar
  • 3.5 cups flour
  • .5 tsp salt
  • 3 tbsp butter, melted

Steps

  1. Mix yeast with 1 cup flour and set aside. Mix water, sugar, and 1 cup flour until well combined. Add yeast and flour mixture and mix for 2 minutes. Add the rest of the flour and mix until smooth. Knead for 3 minutes. Roll out about 1/8 inch thick and cut into 1 to 2 inch strips, then cut again across the middle (so you have 2 equal sides). Butter cookie sheet. Twist 2 strips of dough together and place on cookie sheet. Place fairly close together. Brush with butter and sprinkle generously with garlic salt, parmesan cheese, and parsley. Cover and let rise for 30 minutes. Bake at 375F for 15 minutes or until golden brown.

Ingredients for 6 servings

  • 1 lb penne pasta
  • 1 bunch broccoli
  • 3 chicken breasts
  • 2 tbsp cream cheese
  • 2 cups heavy cream
  • .5 cup butter
  • .75 cup Parmesan cheese
  • .5 tsp garlic powder
  • .75 tsp chipotle powder
  • Salt and pepper to taste

Steps

  1. Cook pasta according to package directions.
  2. Clean and cut up broccoli into florets. Steam until tender. Grill or fry chicken. Cut into bite-sized pieces.
  3. Make sauce by bringing the cream cheese, heavy cream and butter to a simmer. Add the Parmesan cheese, and seasonings. Combine the sauce, broccoli and chicken. Serve over penne pasta.
