Ingredients for 12 servings

  • 1 cup peanut butter
  • 1 cup powdered sugar
  • 2 tbsp light whipping cream

Steps

  1. Cream together all ingredients. Shape into balls. Dip in melted chocolate.

Ingredients for 8 servings

  • 1 quart apple pie filling
  • 2 cups brown sugar
  • 1.5 cups flour
  • 1.5 cups oatmeal
  • 2 tsp cinnamon
  • 1 cup margarine, softened

Steps

  1. Spread pie filling in bottom of pan. Mix remaining ingredients and cut in margarine. Sprinkle mixture over filling. Bake at 350F for 40 to 45 minutes. Serve with ice cream or cool whip.

Ingredients for 12 servings

  • 2 cups flour
  • 1 tbsp sugar
  • 4 tsp baking powder
  • .5 tsp salt
  • 1 egg
  • .66 cup milk
  • .5 cup shortening

Steps

  1. Gently stir flour, sugar, baking powder, and salt with a fork 6 or 7 times (do not over stir). Cut in shortening. Mix egg and milk together. Stir egg mixture into flour. Dump on floured surface and knead together only until it all comes together. Roll about 3/4 inch thick and cut out biscuits. Place on ungreased pan with edges touching (for a softer biscuit), Bake at 450F for 10 to 14 minutes or until golden brown.

Description

This was my favorite cake growing up.

Ingredients for 15 servings

  • 1 box of white, yellow, or lemon cake
  • 1 can sweetened condensed milk
  • 5 small limes, juiced
  • 8 oz cool whip
  • 1 can crushed pinapple

Steps

  1. Mix and bake cake according to directions on box for a 9 x 13 pan.
  2. Mix sweetened condensed milk and lime juice and let sit for 5 minutes. Then add the rest of the ingredients and mix well. Frost cake and refrigerate for couple of hours before serving.

Ingredients for 8 servings

  • 1 cup cooked rice, warm
  • 2 chicken breasts, cooked and shredded
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • .5 tsp garlic salt
  • 1 can black beans, rinsed
  • 1 green onion, finely sliced
  • .5 roasted red pepper, diced
  • .25 cup fresh cilantro, chopped
  • 2.66 cup shredded Mexican blend cheese
  • 8 burrito-sized flour tortillas
  • .25 cup melted butter
  • Sour cream
  • Guacamole

Steps

  1. Mix together rice, chicken, lime, chili powder, cumin, garlic salt, beans, onion, red pepper and cilantro. Set aside. Sprinkle 1/3 cup of cheese in the center of each tortillas. Then arrange chicken and rice mixture down the center of each tortilla. Roll each tortilla up burrito style. Brush rolled up wraps with butter and place on a heated panini maker. Cook for 3 minutes and serve with sour cream and guacamole.

Ingredients for 20 servings

  • .66 cup frozen unsweetened apple juice concentrate, thawed
  • .5 cup honey
  • .33 cup canola oil
  • .25 cup brown sugar
  • 1 tbsp cinnamon
  • .5 tsp salt
  • 5 cups old fashioned oats
  • .5 cup wheat bran
  • .5 cup whole flax seeds
  • .5 cup sliced almonds
  • .5 cup roughly chopped pecans
  • .5 cup sunflower seeds, shelled
  • 1 cup raisins

Steps

  1. Position oven racks in the top and bottom of the oven. Preheat to 325F. Coat 2 large cookie sheets with cooking spray. In a small saucepan, whisk together the apple juice, brown sugar, oil, and maple syrup. Over medium heat bring to a simmer. Remove from heat, stir in cinnamon and salt. In a large bowl, combine oats, bran, flax, sunflower seeds, almonds, and pecans. Stir in the juice mixture and mix until well combined. Then spread the mixture out on the 2 cookie sheets. Bake for 15 minutes. Take out and stir and put back into the oven switching the pans on the racks from top to bottom, bottom to top. Continue baking for another 15 minutes. Take out and let cool for 5 minutes on pan. Put into a large bowl and mix raisins in well. Let cool completely then store in an airtight container.

Ingredients for 15 servings

  • .75 cup whole wheat flour
  • .5 cup white flour
  • 2 cups granola
  • 8 oz cream cheese
  • 1.25 cups dark brown sugar
  • 1 egg
  • .75 cup butter
  • .75 cup jam

Steps

  1. Mix flours and 1 cup sugar in a large bowl. Add butter and mix until crumbly. Stir in granola. Reserve 3/4 cup of the mixture. Press the rest into the bottom of a 9 x 13 baking dish. Mix cream cheese and remaining sugar along with the egg until well blended. Spread over the crust. Top with jam. Sprinkle the remaining "crust mix" over the top. Bake at 350 for 25-30 minutes. Cool completely before cutting.

Description

This is a twist on regular French toast and a new favorite at our house.

Ingredients for 12 servings

  • 2 tbsp oil
  • 1 cup flour
  • 1 cup milk
  • 2 eggs
  • 1 tsp baking powder
  • .5 tsp salt
  • 1 tsp sugar
  • .75 tsp ground cinnamon
  • .5 tsp vanilla extract
  • .5 tsp maple flavoring
  • 12 slices Texas toast bread

Steps

  1. Heat a skillet over medium-high heat and brush on oil to coat the entire skillet. Whisk together all dry ingredients. In a separate bowl, mix together milk, eggs, and flavorings. Combine the wet and dry ingredients, stir until combined.
  2. Pour batter into an 8 x 8 square baking dish and dip single pieces of bread into the batter, flipping to coat both sides. This batter only coats the bread and will not soak into the bread like regular French toast. Place immediately on the hot skillet. Flip when golden brown and brown the other side. Mix batter in between batches of dipping bread so the flour doesn't settle to the bottom of the dish.

Description

These have a great "fall flavor" and I love the cinnamon chips in them!

Ingredients for 24 servings

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cloves
  • 1 tsp vanilla
  • 2 cups flour
  • 2 cups oatmeal
  • 1 cup craisins
  • 10 oz bag Hershey Cinnamon Chips

Steps

  1. Cream together butter, sugars, and eggs. In a separate bowl, mix salt, baking soda, baking powder, cloves, vanilla, and flour, then add to creamed mixture and combine. Add remaining ingredients and mix well. Drop by tsp onto sprayed cookie sheet. Bake at 375F for about 9 minutes watching carefully. The trick is to take them out when they are almost done and let them sit on the cookie sheet for a couple more minutes before removing them.

Ingredients for 20 servings

  • 8 cups old fashioned oats
  • 1 cup wheat bran
  • 1 cup flax seed
  • 1.5 cups chopped almonds or pecans
  • 1 cup coconut
  • 1 cup sunflower seeds
  • .5 cup oil
  • .5 cup unsweetened applesauce
  • .5 cup brown sugar
  • .75 cup honey or agave nectar
  • 2 tbsp vanilla
  • 2 tbsp cinnamon
  • 2 tbsp maple syrup

Topping:

  • 2 cups semi sweet or milk chocolate chips
  • 1 cup raisins

Steps

  1. Mix oats, bran, flax seed, almonds, coconut, and sunflower seeds and set aside.
  2. In a saucepan bring to a boil the oil, applesauce, brown sugar, honey, vanilla, cinnamon and maple syrup. Once it boils, remove from heat and pour over the oat mixture. Mix until well combined. Spread onto two large greased cookie sheets. Bake at 250F for 45 minutes, stirring halfway through baking time. Take out of the oven and let granola set on sheets for 1 hour undisturbed. Then add the chocolate chips and raisins and mix well. store in an airtight container or ziplock bags. Keeps for months.
