Dorothy Farmer: We made this recipe often when we (Walter, Janette and baby Tyler, and Jack and Dorothy) lived in the motor home together. Pleasant memories!!

Ingredients for 8 servings

  • 1.5 lbs ground beef
  • .67 cup cracker crumbs
  • .33 cup minced onion
  • 1 egg
  • 1.5 tsp salt
  • .25 tsp ginger
  • .25 cup milk
  • 1 tbsp shortening
  • 2 tbsp cornstarch
  • 14 oz can pineapple tidbits, reserve drained juice
  • .33 cup vinegar
  • .33 cup chopped green pepper
  • .5 cup packed brown sugar
  • 1 tbsp soy sauce

Steps

  1. Mix ground beef, cracker crumbs, minced onion, egg, salt, ginger, milk and shape into small meatballs. Melt shortening and brown meatballs and cook until done. Keep warm. Pour fat from skillet, after removing meatballs. Mix and cook until smooth the cornstarch, pineapple juice, vinegar, chopped green pepper, brown sugar and soy sauce. Add pineapple and pour over meatballs.

Jennifer Crites: This is the toffee that I make for family gatherings and for Debbie at Christmas! I sent her a Christmas tin of toffee many years ago and she has faithfully sent back the empty tin year after year for refills!

Ingredients for 1 serving

  • 1 cup butter (I prefer using Blue Bonnet margarine)
  • 1 tbsp light corn syrup
  • 1.33 cup sugar
  • 3 tbsp water
  • 2 (8 oz) Hershey Milk chocolate bars
  • 1.5 cups sliced almonds, divided

Steps

  1. Combine the butter, corn syrup, sugar, and water in a medium sauce pan. Cook to 300F or hard crack stage on a candy thermometer, stirring constantly. Pour out onto a non-greased cookie sheet that is somewhat flexible (easier to remove hardened candy from). When cooled and hardened, melt 8 oz chocolate and spread evenly over the toffee and immediately sprinkle with half the almonds. Refrigerate to harden the chocolate. Turn the candy over and repeat the process. Break into pieces when all the chocolate is set, then send some to Debbie!

Annie's favorite ice cream!

Ingredients for 24 servings

  • 1.5 cups sugar
  • 1 tbsp flour
  • .25 tsp salt
  • 2 eggs
  • 1 cup milk
  • .25 cup cherry gelatin dry (not sugar free)
  • 1 tbsp vanilla
  • 2 cups whipping cream
  • 10 oz bottle maraschino cherries with juice, cherries chopped fine
  • 2 cups milk
  • 8 oz Hershey chocolate bar with almonds, chopped fine

Steps

  1. In a medium sauce pan mix sugar, salt, and flour. Whisk in 1 cup milk and eggs. Add cherry jello. Bring to a boil, stirring constantly. Strain liquid to remove all lumps. Add vanilla, whipping cream, 2 cups of milk, cherries and chocolate. Stir well. Pour into 4 quart ice cream cylinder. Put on lid and refrigerate overnight. Freeze according to your ice cream machine.

In going through my recipes for this project, I came across this recipe for Cupid's Wedding cake which I received as a bride at a wedding shower held for me in Deaver, Wyoming. The recipe has yellowed over the years, but still very readable and full of wisdom. It was given to me by Mrs. Hylas T. Finley, know as "Ida" on September 11, 1946

Ingredients for 100 servings

  • 5 lbs fervent devotion
  • 3 lbs extract of faithfulness
  • 4 quarts of heartfelt satisfaction
  • 1 lb each of prudence and good nature
  • 6 scruples each of confidence and mutual forbearance
  • 8 oz of gentleness and modesty
  • 12 scruples of matrimony fidelity
  • 2 lbs connubial felicity
  • 4 qts ecstatic enjoyment
  • 4 lbs patience, industry and economy
  • 2 lbs each wisdom and experience
  • 9 oz discretion and benevolence
  • 7 oz spice of sweetness
  • 1.5 lbs seeds of virtue
  • 3 oz essence of purity
  • 7 pints sweetness of disposition
  • 1 qt balm of a thousand ills
  • 1 gallon milk of human kindness
  • 10 grains of common sense

Steps

  1. Mix thoroughly with cheerfulness. Pour mixture into a golden bowl of domestic happiness. Lubricate with oil of gladness. Bake in oven with double blessedness, heated by the fire of true LOVE. While warm spread over the whole with a frosting of gracefulness. In the center place the star of hope set around with dimples and the sparkle of bright eyes. Encircle with the wreath of smiles, interwoven with rosy blushes and pink perfection. Fasten the wreath with a golden cord of harmony and silver thread of discourse. One cake will last a lifetime, and improve with age. All who eat of it will never have cause to seek for a divorce.

Jennifer Crites: We used this roll recipe to make sandwiches for Katie's wedding reception.

Ingredients for 24 servings

  • 1 cup heated milk
  • .5 cup butter
  • 1.5 tbsp yeast
  • 1 tbsp sugar
  • 1 cup warm water
  • .5 cup sugar
  • 4 eggs
  • 4 cups flour (more)
  • 1 tsp salt

Steps

  1. Heat milk. Add cube of butter to melt and cool the milk. In a separate bowl, dissolve yeast in 1 cup water and 1 tbsp sugar and set aside. Beat 1/2 cup sugar and eggs. Add in flour, salt and milk mixture, and dissolved yeast. Knead together to make a slightly gooey dough. Add more flour as needed. Rise double, punch down. Roll out and cut into circles. Dip in melted butter and fold in half to form Parkerhouse rolls. Allow to raise and bake at 375F for about 10 minutes or until brown.

Refreshingly delightful and amazing with raspberries!

Ingredients for 15 servings

  • 1 white cake mix
  • 2 cups milk
  • 8 oz cream cheese, softened
  • 2 (3 oz) pkgs instant vanilla pudding
  • 20 oz can crushed pineapple, drained
  • .25 powdered sugar
  • 8 oz container cool whip
  • 1 cup coconut

Steps

  1. This is a 4 layered dessert. First layer: Make cake according to box directions and bake in a 15x11x1 pan for 15 minutes at 350F. Cool.
  2. Mix together 1 cup of milk, cream cheese, and 1 box pudding until smooth. Carefully spread over the cooled cake for 2nd layer.
  3. Spread drained pineapple over the cream cheese mixture. The pineapple can be substituted with sliced, fresh strawberries. Thawed, crushed raspberries are my favorite. I've also used freezer jams as the 3rd layer.
  4. The frosting is made by mixing together the other pudding, 1 cup milk, 1/2 cup powdered sugar and folding in the cool whip. Frost the cake and sprinkle with coconut. Chill for 24 hours.

Ingredients for 18 servings

  • Dough from Debbie's Basic Dough (recipe in this book)
  • .25 cup softened margarine
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp minced dry onion
  • 1 tsp paprika
  • 1 tsp garlic salt

Steps

  1. Mix together butter, Parmesan cheese, dry onion, paprika and garlic salt. Divide the dough in thirds and work each third separately. Roll the first third flat into a rectangle 1/2 inch thick, about 12 inches long and 9 inches wide. Cut this into thirds, about 12 inch by 3 inch pieces. Spoon a third of the butter/cheese mixture down the center of each third and bring edges together, pinching to seal. (If the butter touches the edges, they will be impossible to pinch together and seal.) This will make three "ropes" that you will braid together. Tuck in ends. Make sure the ends are secured because as the bread raises, they tend to come undone. Brush finished braid with beaten egg and top with sesame seeds or poppy seeds. Let rise double and bake at 375F for 35-45 minutes. You may use the other 2/3 of the dough in two more braids or cinnamon rolls or dinner rolls. The butter/cheese mixture will do just one loaf.

We used to have a tradition of passing these out on Christmas Eve to our best friends. The kids would deliver them hot to our friends' doors.

Ingredients for 72 servings

  • 2 cups scalded milk
  • 1 cup sugar
  • 3 rounded tbsp yeast
  • 12 cups flour
  • 1 tbsp salt
  • 1 cup water
  • 1 cup melted margarine
  • 1 tbsp sugar
  • 6 beaten eggs

Streusel Topping

  • .5 cup melted margarine
  • 1 cup flour
  • 1 cup sugar
  • Sliced almonds

Glaze

  • 2 lbs powdered sugar
  • 1 tbsp vanilla
  • Canned milk

Steps

  1. Combine 1 cup water and 1 tbsp sugar and 3 tbsp yeast and let it set until it activates. After the scalded milk cools down, combine all the ingredients except flour and then start adding the flour slowly until it has all been added. It will take more than is suggested. Knead 5 minutes by machine and let rise until double and then beat down and roll out. Divide dough in half and work with half at a time. Melt 1 cube margarine and pour half on each part of the dough. Sprinkle with cinnamon and sugar. Roll up and slice into 1-inch pieces. Put in greased pans and sprinkle with streusel topping. Let rise until ready and bake at 375F for 15-20 minutes. This recipe fits into 6 round aluminum cake pans perfectly.
  2. Struesel Topping: 1 cube melted margarine, 1 cup flour, 1 cup sugar. Mix all together and sprinkle over rolls before baking. Top with sliced almonds immediately after taking them from the oven and cover with a glaze made from 1-2 lb sack powdered sugar, about 1 tbsp vanilla and enough canned milk to make it about the consistency of Elmer's glue.

Great in Gyro sandwiches or as a spread on any sandwich

Ingredients for 12 servings

  • 4 cups fresh unflavored yogurt
  • 1 medium cucumber peeled and grated
  • 4 cloves garlic minced very fine
  • 2 tbsp olive oil
  • Salt
  • Pepper

Steps

  1. Place a cheese cloth in a colander and pour in the yogurt. Allow yogurt to drain for several hours. Place the grated cucumber in another colander and drain for 2 hours. Mix all the ingredients and chill.

This recipe is Daniel's favorite childhood dessert!

Ingredients for 12 servings

  • .75 cup flour
  • 1 tsp baking powder
  • .25 tsp salt
  • 4 eggs room temperature
  • .667 cup sugar
  • 1 tsp vanilla
  • 1 cup heavy cream
  • 3 tbsp sugar
  • Strawberries

Steps

  1. Use a jelly roll pan that has been sprayed with Pam and then lined with wax paper and then spray the paper too. Preheat oven to 350F, Beat room temperature eggs in a chilled bowl until thick and lemony. Gradually add sugar until thick. Stir in vanilla and fold in dry ingredients. Spread batter in pan. Bake at 350F for 10 minutes. Barely cook this cake. If it is too done it will not roll. When cake is done sprinkle powdered sugar in a towel and turn cake out onto the towel, roll it up, and let cool. While the cake is cooling whip 1 cup heavy cream and 3 tbsp sugar until stiff. Slice strawberries (can use peaches or whole raspberries). When cake is cool spread out cake and ice with whipped cream and berries and roll the cake back up again. Frost top with additional whipped cream and garnish with berries.
