Ingredients for 36 servings

  • .75 cup shortening
  • 1 cup sugar
  • 1 egg
  • 4 tbsp molasses
  • 2 cups flour
  • 2 tsp baking soda
  • .5 tsp salt
  • 1 tsp cinnamon
  • .75 tsp ginger
  • Raw sugar
  • White chocolate

Steps

  1. Cream shortening and sugar, add egg and molasses. Mix in flour, soda, salt, cinnamon, and ginger. Chill dough 1 hour. Form into 1 inch balls. Dip one half into raw sugar and place on parchment lined cookie sheet 1 inch apart. Bake in 350F preheated oven for 10 minutes or until the top of the cookie starts to form cracks. Remove from oven and cool on racks. Melt chocolate and dip non sugar-side of cookie into the chocolate. Place on parchment until chocolate has hardened.

Ingredients for 36 servings

  • 14 oz pkg coconut
  • .25 cup flour
  • .25 cup sugar
  • .25 cup light corn syrup
  • .25 cup cream of coconut
  • 3 egg whites, beaten
  • 2 tbsp butter, melted
  • 1 tsp vanilla
  • Pinch of salt

Steps

  1. In a food processor, mince 1 1/2 cups of the coconut. Beat egg whites until foamy. Combine all ingredients and mix into a dough. Chill for 1 hour in refrigerator. Preheat oven to 350F. Scoop dough with a #70 scoop or form into 1 inch balls and place 1 inch apart on parchment lined pan. Bake for 16-18 minutes.
  2. Another version would be to put a chocolate kiss inside and encase it with the coconut dough. Bake as normal.

Ingredients for 24 servings

  • .66 cup sugar
  • .33 cup butter, softened
  • 1 egg
  • .5 tsp vanilla
  • .33 cup sour cream
  • 2 cups flour, extra if dough is too sticky
  • .75 tsp baking soda
  • .75 tsp baking powder
  • Dash salt

Filling:

  • .33 cup butter, softened and divided
  • .5 cup brown sugar, divided
  • .5 tsp cinnamon, divided
  • .5 cup chopped nuts, divided

Frosting:

  • .25 cup butter, softened
  • 8 oz cream cheese, softened
  • 1 lb powdered sugar
  • .5 tsp vanilla

Steps

  1. Cream together the sugar and butter. Add eggs, vanilla and sour cream and mix well. Add the flour, soda, baking powder and salt. Mix until well combined, adding more flour if dough is too sticky. Form into a flattened round and wrap with plastic wrap. Put into the refrigerator for at least 2 hours.
  2. Preheat oven to 350F. Line baking sheet with parchment.
  3. Divide the dough in half. Roll each half into 12x5 inch rectangles on a floured piece of plastic wrap. Spread each with the divided filling ingredients, starting with the butter, brown sugar, cinnamon, and nuts. Roll lengthwise (12 inch side) into a log. Cut into 1/2 inch pieces and place on the parchment paper. Bake for 9-11 minutes. Remove and cool for 5 minutes before removing from baking sheet.
  4. Mix together the frosting by creaming the butter and cream cheese. Add powdered sugar and vanilla. Beat until creamy. Frost when cookies are cooled.

Ingredients for 15 servings

  • 1 cup semi-sweet chocolate chips
  • 1 can sweetened condensed milk
  • .25 tsp salt
  • 1 tsp vanilla
  • .5 cup nuts, chopped (optional)

Crust:

  • 1 cup margarine
  • 2 cups brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2.5 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups quick oats

Steps

  1. Chocolate filling- Melt chocolate chips, sweetened condensed milk, and salt. Remove from heat then add 1 tsp vanilla and nuts (optional).
  2. Crust- Cream margarine and brown sugar together. Add eggs and 2 tsp vanilla. Blend well. Stir in flour, baking soda, salt, and quick oats.
  3. Press 2/3 of the mixture into a greased 11x15 pan. Spread with chocolate filling. Sprinkle with remaining oat mixture over top of filling. Bake 350F for about 25 minutes or until lightly browned. Cool and cut into bars.

Ingredients for 8 servings

  • .5 cup margarine, melted
  • .66 cup sugar
  • 1 cup flour
  • 1 tsp vanilla
  • 4.5 tbsp cocoa
  • 2 eggs
  • .25 tsp salt

Steps

  1. Mix together. Drop batter by small teaspoon on heated waffle iron. Bake 1 minute. Lift off with fork. Sprinkle with powdered sugar or frost. Can sprinkle with nuts.

Ingredients for 24 servings

Crust:

  • 1.5 cups flour
  • .5 tsp baking powder
  • .5 tsp salt
  • .25 tsp baking soda
  • .5 cup butter or margarine, softened
  • 1 tsp vanilla
  • 2 egg yolks
  • 3 cups mini marshmallows (not store brand, they will collapse)

Filling:

  • .66 cup karo syrup
  • .25 cup butter
  • 2 tsp vanilla
  • 12 oz pkg or 2 cups peanut butter chips
  • 2 cups Rice Krispies
  • 2 cups salted peanuts

Steps

  1. Heat oven to 350F. In a large bowl, combing all crust ingredients except marshmallows at low speed until crumbly. Press firmly into the bottom of an ungreased 9x13 pan. Bake for 12 to 15 minutes or until light golden brown. Remove from oven. Immediately sprinkle marshmallows. Return to oven and bake an additional 1 to 2 minutes or until marshmallows are just beginning to puff. Cool while preparing topping.
  2. In large saucepan, combine all topping ingredients except cereal and peanuts. Heat just until chips are melted and mixture is smooth, stirring constantly. Remove from heat and stir in cereal and peanuts. Carefully spread to cover (it is a little tricky). Refrigerate until firm. Cut into bars.

  • 1 tsp vanilla
  • 2 cups and 2 tbsp flour

Steps

  1. Cream butter and sugars. Add eggs one at a time. Add vanilla. Sift dry ingredients together then add to creamed mixture. Stir in chocolate chips. Spread onto a pizza pan and bake at 350F for about 20 minutes

Ingredients for 15 servings

  • .75 cup whole wheat flour
  • .5 cup white flour
  • 2 cups granola
  • 8 oz cream cheese
  • 1.25 cups dark brown sugar
  • 1 egg
  • .75 cup butter
  • .75 cup jam

Steps

  1. Mix flours and 1 cup sugar in a large bowl. Add butter and mix until crumbly. Stir in granola. Reserve 3/4 cup of the mixture. Press the rest into the bottom of a 9 x 13 baking dish. Mix cream cheese and remaining sugar along with the egg until well blended. Spread over the crust. Top with jam. Sprinkle the remaining "crust mix" over the top. Bake at 350 for 25-30 minutes. Cool completely before cutting.

These have a great "fall flavor" and I love the cinnamon chips in them!

Ingredients for 24 servings

  • 1 cup butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 eggs
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cloves
  • 1 tsp vanilla
  • 2 cups flour
  • 2 cups oatmeal
  • 1 cup craisins
  • 10 oz bag Hershey Cinnamon Chips

Steps

  1. Cream together butter, sugars, and eggs. In a separate bowl, mix salt, baking soda, baking powder, cloves, vanilla, and flour, then add to creamed mixture and combine. Add remaining ingredients and mix well. Drop by tsp onto sprayed cookie sheet. Bake at 375F for about 9 minutes watching carefully. The trick is to take them out when they are almost done and let them sit on the cookie sheet for a couple more minutes before removing them.

  • 1 white or yellow cake mix
  • .25 cup brown sugar
  • .25 cup butter, softened
  • .25 cup water
  • 2 eggs
  • .5 tsp vanilla
  • .5 bag chocolate chips

  1. Mix all ingredients together except chocolate chips. Fold in chocolate chips and spread in a 9 x 13 pan. Bake at 350F for 25-30 minutes or until toothpick inserted comes out clean.
