Ingredients for 24 servings

  • 1 (29 oz) can pumpkin
  • 4 eggs
  • 1 cup oil
  • .5 tsp salt
  • 2 tsp cinnamon
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 1 tsp baking soda

Frosting:

  • 8 oz cream cheese
  • .5 cup butter, softened
  • 2 tbsp milk
  • 1 tsp vanilla
  • .5 bag powdered sugar

Steps

  1. Combine all ingredients an pour into a greased cookie sheet pan. Bake at 350F for 25 minutes. Cool and then frost.

Ingredients for 10 servings

  • 10 cups fresh peaches, diced
  • 8 cups fresh tomatoes, diced
  • 1 cup white vinegar
  • 1.5 cups onion, diced
  • 6 jalapenos, seeded and diced
  • 2 cups green bell peppers
  • .25 cup cilantro, minced
  • 3 cloves garlic, minced
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1 tbsp cumin
  • .25 cup sugar

Steps

  1. Mix all together and boil gently about 10 minutes or until slightly thickened. Pour into pint jars and process 20 minutes.

Ingredients for 8 servings

  • .5 cup buttermilk
  • .66 cup whole wheat bread crumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • .5 tsp thyme
  • .5 tsp paprika
  • .5 tsp salt
  • 1 tbsp parmesan cheese
  • .25 tsp pepper
  • .125 tsp ground mustard
  • 1.25 lb chicken cut into thin strips

Steps

  1. Preheat oven to 400F. Spray pan with cooking spray. Mix all ingredients together except buttermilk and chicken. Soak chicken in buttermilk for 5-10 minutes. Roll in bread crumb mixture. Place on greased cookie sheet. Spray chicken lightly with cooking spray. Bake for 20 minutes or until chicken is done.

These taste just like peach cobbler!

Ingredients for 12 servings

  • 1.5 cups flour
  • .5 cup brown sugar
  • .5 cup sugar
  • .75 tsp salt
  • .5 tsp baking soda
  • .125 tsp nutmeg
  • .125 tsp cinnamon
  • 1 tsp vanilla
  • 2 eggs
  • .5 cup oil
  • 1 (15 oz) can sliced peaches, drained well and chopped

Topping:

  • .25 tbsp cinnamon
  • .75 tbsp sugar

Steps

  1. Mix dry ingredients. Add remaining ingredients except peaches. Stir until blended (may appear thick). Fold in peaches. Fill 12 muffin liners 3/4 full. Sprinkle muffin tops lightly with topping. Bake at 350F for 25-27 minutes or until toothpick inserted comes out clean. Let cool for 10 minutes before removing from pan.

We love to serve these during the summer when we barbecue.

Ingredients for 8 servings

  • 5 medium potatoes, peeled and sliced
  • .25 cup grated parmesan cheese
  • 2 tsp minced fresh parsley
  • .75 tsp garlic powder
  • .5 tsp salt
  • .125 tsp pepper
  • 4 tbsp butter, cubed

Steps

  1. Place 1/2 of the potatoes on a large piece of heavy duty foil. Sprinkle with cheese, parsley, garlic powder, salt, and pepper. Dot with butter. Top with remaining potatoes. Fold foil over and seal tightly. Grill, covered, over medium heat for 30 minutes, turning half way through.

Ingredients for 8 servings

  • 2 tbsp butter
  • 1 onion, diced
  • .5 tsp crushed rosemary
  • 2 cloves garlic
  • 5 cups squash, cooked
  • 1 cup potatoes, peeled and diced
  • 5 cups chicken broth
  • 1 tsp salt
  • .25 tsp pepper
  • .5 cup milk
  • 1.5 cups diced ham

Steps

  1. Melt better, saute onion and rosemary for 5-10 minutes. Add garlic and cook for 1 minute. Add potatoes, broth, salt and pepper. Boil until potatoes are soft. Remove potatoes and onions from broth and blend up in blender. Add squash and broth to blender with potatoes and onion. Blend well and put back in pot. Add milk and ham. Cook until warm, about 10 minutes.

Ingredients for 6 servings

  • 2 lbs zucchini, peeled, chopped, and cooked in salt water
  • 2 chicken breasts, cooked and chopped
  • 2 cans cream of chicken soup
  • 1 tbsp onion, diced
  • 1 cup sour cream
  • 1 cup shredded cheese
  • 1 box chicken stuffing
  • .5 cup butter, melted

Steps

  1. Mix all, except zucchini,chicken stuffing, and melted butter, together. Put mixture in to buttered 9x13 pan. Add zucchini on top. Mix chicken stuffing and melted butter together then sprinkle on top. Bake at 350F for 30-40 minutes.

Ingredients for 6 servings

  • 1 lb ground beef
  • 1 bag tater tots
  • 1 cup frozen peas, corn, or carrots
  • 2 cans cream of chicken soup
  • 1 cup milk

Steps

  1. Brown the ground beef. In the bottom of a 9x13 pan, layer a bag of frozen tater tots and salt and pepper to taste. Sprinkle the frozen vegetables over the tots. Mix the soup, milk and beef together and spread over the top. Cover and bake at 400F for 30-40 minutes until bubbly and hot.

Ingredients for 10 servings

  • 10 dried guajillo peppers
  • 2 tsp salt
  • 2 tbs oil
  • .125 onion

Steps

  1. Place the dried peppers in a pot of boiling water. Cover and soak for 1/2 hour or more. Pour water and peppers in a blender with the salt. Blend for several minutes until very smooth.
  2. In a small sauce pan, heat oil and add the onion and cook until onion is brown. Remove onion and discard. To the oil, add the pepper mixture which has been strained through a fine mesh colander. Cook this pepper pulp in the oil for a few minutes. The salsa is now ready for use.

  • .25 cup water
  • 2 eggs

  • .5 bag chocolate chips

  1. Mix all ingredients together except chocolate chips. Fold in chocolate chips and spread in a 9 x 13 pan. Bake at 350F for 25-30 minutes or until toothpick inserted comes out clean.
