Description

This is the recipe I have used to frost the hundreds of angel food cakes I have made. The maraschino cherry version was the favorite of Jack's.

Ingredients for 15 servings

  • .5 cup sugar
  • .25 cup white corn syrup
  • 2 tbsp water
  • .25 cup egg whites (2 small)
  • 1 tsp vanilla

Steps

  1. Stir sugar, corn syrup and water together in a small saucepan. Boil rapidly until the mixture will spin a 6-8 inch thread when a small bit is dropped from a spoon.
  2. While mixture is boiling, beat the egg whites at high speed with an electric beater until the egg whites stand in very stiff peaks. Blend in 1 tsp vanilla.
  3. Immediately when the sugar mixture will spin a thread, pour the hot syrup slowly in a thin steady stream into the beaten egg whites, beating constantly until the mixture stands in very stiff peaks and consistency to ice a cake. Blend in 1 tsp vanilla
  4. To make the maraschino cherry variation, use the juice from the maraschino cherries in place of the water. This is good when used as the icing of a maraschino cherry pecan nut angel food cake.

Ingredients for 1 serving

  • 2.75 cups confectioner's sugar
  • 6 tbsp unsweetened cocoa powder
  • 6 tbsp butter
  • 5 tbsp evaporated milk
  • 1 tsp vanilla

Steps

  1. In a medium bowl, sift the sugar and cocoa. Set aside. In a large bowl, cream butter until smooth, then gradually beat in sugar mixture alternately with milk. Blend in vanilla. Beat until light and fluffy. If necessary, adjust the consistency with more milk or sugar.

Ingredients for 16 servings

  • 6 quarts sliced cukes
  • 2 quarts sliced onions
  • 9 cups cold water
  • 1 cup pickling salt
  • 6 cups vinegar-cider or white distilled, must have 5% acidity
  • 6.75 cups sugar
  • 1 tbsp tumeric
  • 1 tsp white or yellow mustard seed
  • 1 tsp celery seed

Steps

  1. Put cukes, onions, water and salt in a large crock or jar and let stand for 3 hours.
  2. Rinse the cucumbers very well to get the salt off and then drain well. Pack cukes into clean, hot pint jars.
  3. Make a sauce of the remaining ingredients. Bring to a boil and cover cukes. Put on lids and bands. Water bath for 10 minutes or for the time required for your altitude.

Ingredients for 1 serving

  • 2 cups buttermilk
  • 2 cups mayonnaise
  • 1 tsp garlic salt
  • 1 tsp onion salt
  • 1 tsp accent
  • 1 tsp pepper

Steps

  1. Mix well and refrigerate. Makes 1 quart. Will last in refrigerator up to 3 weeks.

  • 1 cup dry powdered milk
  • .5 cup hot water
  • 1 cup sugar
  • 1 tbsp butter

  1. Blend in blender until mixed well. Makes 14 oz.

Description

This is the BEST jerky I have ever had. You would never know it was made with hamburger.

Ingredients for 1 serving

  • 1 lb extra lean hamburger
  • 2 tsp brown sugar
  • 1 tbsp liquid smoke
  • .5 tsp garlic salt
  • .25 tsp cayenne pepper
  • .5 tsp season salt
  • .5 tsp Accent
  • .5 tsp maple flavoring

Steps

  1. Mix together by hand, do not over mix (the jerky will be brittle and fall apart if you do.) Form into strips or use a jerky press. Dehydrate until done. Time will vary depending on dehydrator-about 8 hours for 5lbs of hamburger.

Description

This recipe was Jack's favorite jam and came from his mother. He grew up with it.

Ingredients for 60 servings

  • 2 quarts small yellow tomatoes
  • 1 lemon
  • 3 cups sugar
  • 1 tsp salt
  • 4 tbsp ginger root or thinly sliced candied ginger

Steps

  1. Wash and dry tomatoes, cut thin slice from blossom end and press out seeds. Put tomatoes in kettle, sprinkle sugar and salt over the top. Simmer until sugar is dissolved, then boil slowly for 40 minutes. Wash and cut lemon into wafer thin slices, removing seeds. Add lemon and ginger, boil 10 minutes more. Pour into sterilized pint jars.

Description

The family will remember how Jack loved his jams and jellies. This was not only a favorite of Jack but it was mine also.

Ingredients for 100 servings

  • 8 lbs Italian plums
  • 1 lemon
  • 2 oranges
  • Sugar
  • Nutmeats

Steps

  1. Grind together the plums, lemon, and oranges. Measure and add as much sugar as the plum, lemon and orange mixture. Let this stand overnight. Bring to a boil and put in sterilized jars. Add nutmeats, if desired. Makes 8 pints.

Ingredients for 12 servings

  • 2 cups white chocolate chips
  • 1 bag of micro-wave popcorn
  • 1 cup pecans

Steps

  1. Pop the popcorn and put into a large mixing bowl. Melt the white chocolate chips and fold in pecans. Cool on wax paper.

Description

Great in Gyro sandwiches or as a spread on any sandwich

Ingredients for 12 servings

  • 4 cups fresh unflavored yogurt
  • 1 medium cucumber peeled and grated
  • 4 cloves garlic minced very fine
  • 2 tbsp olive oil
  • Salt
  • Pepper

Steps

  1. Place a cheese cloth in a colander and pour in the yogurt. Allow yogurt to drain for several hours. Place the grated cucumber in another colander and drain for 2 hours. Mix all the ingredients and chill.
