Ingredients for 20 servings

  • 6 lbs boneless pork roast (or skinless chicken breasts)
  • .5 liter coca cola
  • 2 lbs brown sugar
  • 10 oz ketchup
  • Flour tortillas

Lime Cilantro Vinaigrette:

  • .25 cup lime juice
  • 2 tbsp white vinegar
  • .5 bunch cilantro, chopped
  • 1 tbsp brown sugar
  • .25 tsp salt
  • .75 tsp garlic
  • .75 tsp dijon mustard
  • .75 cup oil

Steps

  1. Simmer in crock pot 6-8 hours on low. Remove and shred meat. Return meat to crock pot and sauce.
  2. Warm tortillas. Add a serving of meat to the tortilla. Add any or all of the toppings: Cooked rice, black beans, pinto beans, cheese, guacamole, sour cream, tomatoes or fresh salsa, or lettuce. Pour some vinaigrette over the top. Roll up and eat.
  3. Vinaigrette: Remove stems from cilantro. Puree cilantro, lime juice, and vinegar. Add sugar, garlic and salt. Puree until smooth. Add mustard and slowly pour oil in a thin stream while continuously blending.<br>

Ingredients for 6 servings

  • 2.5 lbs boneless pork roast
  • .75 cup dried minced onion
  • 1 bottle (12 oz) barbecue sauce
  • .25 cup honey
  • Sandwich rolls

Steps

  1. Place roast in greased 3-5 quart slow cooker. Combine onion, barbecue sauce, and honey. Pour mixture over meat. Cover and cook on low heat 6-8 hours. When roast is done, use two forks to shred meat.

Dorothy Farmer: This recipe has been enjoyed by many. It was originally given to be used with spareribs, but it can also be used with pork chops, chicken, etc. The longer and slower you cook the meat the better it will be.

Ingredients for 8 servings

  • .33 cup onion, chopped
  • 3 tbsp butter
  • 1 cup catsup
  • .33 cup vinegar or lemon juice
  • 2 tbsp brown sugar
  • .5 cup water
  • 2 tsp prepared mustard
  • 1 tbsp worcestershire sauce
  • .125 tsp pepper
  • Salt

Steps

  1. Combine all ingredients together and then pour over browned spareribs and bring sauce to a boil. Place in crock pot at 300F and simmer until meat is tender. This can be done on the stove top. Slowly simmer up to four hours. The longer and slower you cook the meat the better.

Ingredients for 6 servings

  • 2 lbs pork tenderloin
  • 10.75 oz can cream of mushroom soup
  • 10.75 oz can golden mushroom soup
  • 10.75 oz can French onion soup

Steps

  1. Place trimmed pork in a slow cooker. In a bowl combine the soups. Blend until smooth. Pour over pork. Cover and cook for 4-5 hours or until meat is tender. Serve with mashed potatoes. Note: Sometimes, in a pinch, I have substituted an envelope of dry onion soup mix and a cup of water if I can't find French onion soup.
