Ingredients for 6 servings
- 5 tbsp softened butter
- .25 cup masa
- .33 cup sugar
- .5 cup water
- 2 cups of corn kernels, fresh or frozen, divide in half
- .5 cup cornmeal
- 1 tsp baking powder
- .5 tsp salt
- 2 tbsp, plus 1 tsp milk
Steps
- If frozen corn is used, it must be thawed. Mix butter, masa, sugar until light and fluffy. In a blender mix 1 cup of corn with 1/2 cup water and blend until smooth. Combine with butter mixture. Add remaining cup of whole kernels of corn, cornmeal, masa, salt, baking powder, and milk. Mix well. Pour into an 8 inch square pan. Tightly wrap the pan with plastic wrap until water tight. Then put this pan in a larger pan that is filled partly with water and steam this on top of the stove for 50 minutes or so. You may need to add more water to keep it steaming. Do not let it run out of water. It is done when it is smooth and creamy.
