- Vanilla or strawberry yogurt

- 1.5 cups flour
- .5 cup wheat flour
- 1.5 tsp baking powder
- .5 tsp baking soda
- .5 tsp salt
- 1.75 cup buttermilk
- 2 tbsp melted butter
- 1 egg
- 1 tbsp honey
- .5 tsp vanilla
- .5 cup mashed bananas
Sauce (best if doubled):
- 2 cups diced strawberries
- .33 cup orange juice
- 1 tbsp cornstarch
- .5 cup sugar
Steps
- Pancakes- Whisk all wet ingredients together, then add all dry ingredients. Stir until moistened. Fold in bananas and then cook.
- Sauce- Combine all together in a sauce pan. Cook until thickened and strawberries are soft (6-7 minutes). This can be refrigerated up to a week.

Ingredients for 8 servings
- 1 head Romaine lettuce
- 1 head red leaf lettuce
- 11 oz mandarin oranges, drained
- 3 gala apples, sliced
- 8 oz pecans (toasted with 1/4 cup sugar)
Dressing:
- .75 cup sugar
- 1 tsp salt
- .33 cup apple cider vinegar
- 1 tbsp poppy seeds
- 1 tsp dry mustard
- 1 tbsp fresh onion, finely diced
- .75 cup vegetable oil
Steps
- Wash and tear lettuce. Add apples, oranges, and craisins.
- Measure all dressing ingredients except poppy seeds into blender and blend well. then add poppy seeds and blend to mix in.
- Toss salad with pecans and add dressing just before serving.

Ingredients for 6 servings
- 2 small pkgs instant vanilla pudding
- 12 oz cool whip, thawed
- 11 oz can mandarin oranges, drained
- 2 cups buttermilk
- 20 oz can pineapple chunks, drained
- .5 pkg fudge striped shortbread cookies, crumbled
Steps
- Mix pudding and buttermilk, add cool whip. Mix in pineapple and mandarin oranges. Chill until ready to serve. Put in crumbled cookies just before serving.

- 1 cup soy sauce
- 1 cup water
- .75 cup sugar
- .25 cup Worcestershire sauce
- 3 tbsp white vinegar
- 3 tbsp vegetable oil
- .33 cup dried onion flakes

- 12 oz chocolate chips (semisweet)
- 2.66 cups evaporated milk

- Many different white cheeses (queso) are used. A common one is called cotija. It is very crumbly and shreds easily because it is so dry.
- Crema is a Mexican sour cream and can be found in many grocery stores.
- Cilantro is used generously. It can be added to anything.
- Shredded cabbage is used in place of lettuce.
- Frying the onion in the oil to flavor it, is done a lot, such as in Mexican rice, refried beans, or frying tortillas. It adds a lot of flavor.

- 5 serrano peppers, adjust amount to desired hotness

- Combine all ingredients in a blender. Blend until smooth or quick chop for chunky salsa.

- 1 cup butter, softened
- 2 cups packed brown sugar
- 2 eggs
- 1 cup buttermilk
- .75 tsp root beer concentrate or extract
- 4 cups flour
- 1 tsp baking soda
- 1 tsp salt
Frosting:
- 3.5 cups powdered sugar
- .75 butter, softened
- 1.25 tsp root beer concentrate or extract
Steps
- In mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Beat in buttermilk and root beer concentrate, Combine the flour, baking soda, and salt. Gradually add to the creamed mixture. Drop by tbsp 3 inches apart onto greased baking sheets. Bake at 375F for 10-12 minutes or until lightly browned. Remove to wire racks to cool.
- Make frosting by beating butter and root beer concentrate together. Add powdered sugar and beat until smooth. Frost cooled cookies.
