Ingredients
- 1.330.16625 cups flour, divided
- .50.0625 cup sugar
- .50.0625 cup buttermilk
- .330.04125 cup oil (I use half applesauce)
- .50.0625 tsp vanilla (optional)
- 10.125 tsp baking powder
- .50.0625 tsp baking soda
- .250.03125 tsp salt
- 10.125 egg
- .250.03125 cup packed brown sugar
- .250.03125 butter, softened
- .250.03125 cup chopped pecans
- 20.25 tsp cinnamon
Steps
- Preheat oven to 400F. Spray 9 inch round pan with cooking spray. Combine 1 cup flour, sugar, buttermilk, oil, vanilla, baking powder, soda, salt and egg in mixing bowl. Beat until blended. Pour batter into prepared pan.
- Mix remaining flour, brown sugar, butter, nuts, and cinnamon in a small bowl until crumbly. Sprinkle over batter. Bake about 25-30 minutes until done. Serve warm.
- You can prepare the coffee cake without the topping and refrigerate overnight. Sprinkle the streusel over the cake and bake the next morning.
