Watermelon Salad with Mint Leaves - Annie Fish

Ingredients
- 50.833333333333 lbs watermelon
- 10.166666666667 sweet onion
- .250.0416666666667 cup red wine vinegar
- Salt and pepper
- .50.0833333333333 cup extra virgin olive oil
- 20.333333333333 tbsp chopped fresh mint
- 40.666666666667 oz feta cheese, crumbled
Steps
- Cut the seeded melon into bite-sized pieces and set aside. Peel and thinly slice/dice the onion.
- In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in th oil a few drops at a time. Add the mint and adjust the seasonings to taste.
- In a large bowl, combine the melon, onion, and feta. Pour dressing over the mixture and gently toss until evenly coated. Serve.
