PF Chang's Mongolian Beef - Alyson Farmer

Ingredients
- 20.5 tsp vegetable oil
- 1.50.375 tsp minced ginger
- 10.25 tbsp chopped garlic
- .50.125 cup soy sauce
- .50.125 cup water
- .750.1875 cup dark brown sugar
- 10.25 cup vegetable oil
- 10.25 lb flank steak, sliced against the grain into 1/4 inch slices
- .250.0625 cup cornstarch
- 20.5 large green onions, sliced into half inch pieces
Steps
- Heat 2 tsp oil over medium-low heat. Add ginger and garlic, then add soy sauce and water before garlic scorches. Add brown sugar. Increase heat to medium and boil for 3 minutes. Remove from heat.
- Dip steak pieces into cornstarch (dust) and let sit for 10 minutes. Heat 1 cup oil in wok over medium heat. Put meat in wok and saute for 2 minutes (meat will not be completely cooked). Remove meat from pan to paper towels and discard oil. Put meat back in pan without oil and cook 1 minute. Add sauce and cook for an additional minute. Add green onions and cook for an additional minute. Remove beef and onions with slotted spoon, leaving excess sauce behind in pan. Serve.
