Ingredients
- .750.375 cup butter, softened
- 84 oz cream cheese, softened
- 21 cups sugar
- 21 eggs
- 1.50.75 cups mashed bananas
- .50.25 tsp vanilla
- 31.5 cups flour
- .50.25 tsp baking powder
- .50.25 tsp baking soda
- .50.25 tsp salt
- 21 cups chopped pecans, divided
Orange Glaze:
- 10.5 cup powdered sugar
- 31.5 tbsp orange juice
- 10.5 tsp grated orange peel
Steps
- In a large bowl, cream butter, cream cheese, and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Add bananas and vanilla, mix well. Combine flour, baking powder, baking soda, and salt. Add to creamed mixture. Fold in 1 cup pecans.
- Transfer to 2 greased loaf pans. Sprinkle with the remaining pecans. Bake at 350F for 1 to 1 1/4 hours or until a toothpick inserted comes out clean.
- In a small bowl, whisk the glaze ingredients. Drizzle over loaves. Cool for ten minutes before removing from pans and placing on wire racks.
