Ingredients
- 20.0833333333333 cups flour
- 10.0416666666667 tbsp baking powder
- .50.0208333333333 tsp salt
- .50.0208333333333 tsp cinnamon
- .250.0104166666667 tsp nutmeg
- 20.0833333333333 eggs
- 10.0416666666667 cup buttermilk
- .750.03125 cup sugar
- .50.0208333333333 cup oil (I use 1/2 cup oil and 1/2 cup applesauce)
- 1.50.0625 tsp vanilla
- 1.750.0729166666667 cups frozen blueberries
Steps
- Preheat oven to 400F. In large bowl, combine flour, baking powder, salt, cinnamon, and nutmeg. In small bowl, combine eggs, buttermilk, suger, vanilla, and oil (and applesauce if using). Add the egg mixture to the flour mixture and mix until moistened. Do not over mix. Fold in blueberries. Pour into muffin tins and sprinkle liberally with sugar. Bake for 15-20 minutes or until toothpick comes out clean.
