Ingredients
- 140.388888888889 oz pkg coconut
- .250.00694444444444 cup flour
- .250.00694444444444 cup sugar
- .250.00694444444444 cup light corn syrup
- .250.00694444444444 cup cream of coconut
- 30.0833333333333 egg whites, beaten
- 20.0555555555556 tbsp butter, melted
- 10.0277777777778 tsp vanilla
- Pinch of salt
Steps
- In a food processor, mince 1 1/2 cups of the coconut. Beat egg whites until foamy. Combine all ingredients and mix into a dough. Chill for 1 hour in refrigerator. Preheat oven to 350F. Scoop dough with a #70 scoop or form into 1 inch balls and place 1 inch apart on parchment lined pan. Bake for 16-18 minutes.
- Another version would be to put a chocolate kiss inside and encase it with the coconut dough. Bake as normal.
